双螺杆挤压人参制品美拉德反应产物抗氧化活性研究

【摘要】:本实验将双螺杆挤压技术应用到了人参制品的加工中,分别对白参、传统红参和不同挤压条件下的双螺杆挤压人参制品的还原糖、氨基态氮、褐变度和色度等理化指标及抗氧化活性进行了研究,为双螺杆挤压人参制品的开发和利用开辟新的途径,并期望为吉林省人参产业和区域经济的发展以及人们身体健康做出贡献。研究结果表明: 1.双螺杆挤压人参制品中,物料含水量相同的情况下,机筒温度越高,还原糖和氨基态氮含量越少;机筒温度相同的情况下,物料含水量越高,还原糖和氨基态氮含量却越多。样品中还原糖和氨基态氮含量变化趋势为白参传统红参双螺杆挤压人参制品。 2.双螺杆挤压人参制品中,物料含水量相同的情况下,机筒温度越高,褐变度和红色度越大;机筒温度相同的情况下,物料含水量越高,褐变度和红色度反而越小。样品的褐变度和红色度大小顺序为双螺杆挤压人参制品传统红参白参。相关性分析结果表明:褐变度与红色度在0.01水平上呈极显著正相关(R=0.901)。 3.双螺杆挤压人参制品中物料含水量相同的情况下,机筒温度越高,还原力和自由基清除能力越大;机筒温度相同的情况下,物料含水量越高,还原力和自由基清除能力反而越小,最终物料含水量为20%,机筒温度为140℃的双螺杆挤压人参制品表现出较强的还原力和自由基清除能力。样品的还原力和自由基清除能力大小顺序为双螺杆挤压人参制品传统红参白参,其中对羟基自由基的清除能力接近100%。相关性分析表明:还原力与DPPH自由基清除率和羟基自由基清除率在0.01水平上呈极显著正相关(R=0.996-0.998)。 4.物料含水量为20%,机筒温度为140℃的双螺杆挤压人参制品透析之后的内液的还原力,DPPH自由基清除率、羟基自由基清除率和超氧阴离子自由基清除率明显高于外液的,但不及透析之前挤压人参制品的还原力和自由基清除率。 5.用液相色谱仪对样品透析内液中精氨酸双糖苷含量进行测定发现,传统红参和物料含水量为20%,机筒温度为140℃的双螺杆挤压人参制品中含量分别为1.95%和7.79%,双螺杆挤压技术提高了人参制品中精氨酸双糖苷含量。
[Abstract]:In this experiment, the twin-screw extruding technology was applied to the processing of ginseng products. The reducing sugar and amino nitrogen of ginseng products were extruded by twin-screw extrusions under different conditions, such as white ginseng, traditional red ginseng and different extrusion conditions. The physicochemical indexes such as browning degree and chromaticity and antioxidant activity were studied in order to open up a new way for the development and utilization of twin-screw extruded ginseng products. It is expected to contribute to the development of Jilin ginseng industry and regional economy as well as people's health. The results show that: 1. The higher the temperature of the barrel, the less the content of reducing sugar and amino nitrogen in the ginseng products extruded by twin-screw extruding, and the higher the moisture content of the material is, the more the content of reducing sugar and amino nitrogen is when the temperature of the barrel is the same. The changing trend of reducing sugar and amino nitrogen content in the sample was that the traditional red ginseng products were extruded by twin-screw extruding. 2. The higher the temperature of the cylinder, the greater the browning degree and the red degree in the ginseng products extruded by twin-screw extruding, and the higher the moisture content of the material is, the smaller the browning degree and the redness degree are when the temperature of the barrel is the same. The order of browning degree and red degree of the sample is twin-screw extruded ginseng product traditional red ginseng white ginseng. The results of correlation analysis showed that there was a significant positive correlation between browning degree and red degree at the level of 0.01 (RV 0.901). The higher the temperature of the cylinder, the greater the reducing force and the scavenging ability of free radical, and the higher the moisture content of the material is when the temperature of the tube is the same as that of the twin screw extruded ginseng product.
