一株紫色红曲霉液态发酵产红曲色素的特性研究

  红曲霉(Monascus)属微生物菌种可合成有用的次生代谢产物红曲色素(MPs),它们作为食品色素被广泛应用于食品工业中。此外,MPs在医药、化妆品和纺织行业中也具有良好的市场前景。传统的红曲色素的生产主要采用固态发酵方法,但是固态发酵在规模化放大生产中还存在一定的局限性。相比于固态发酵,采用液态发酵技术生产红曲色素在工业规模上更具有优势和竞争力。本论文以从市售红曲米粉中分离筛选的一株紫色红曲霉(Monascus purpureus)为发酵菌种,研究了不同碳源、氮源等营养物质及其浓度,有机酸代谢调节剂,不同光照条件对该菌株液态发酵产红曲色素的影响,并初步优化了发酵培养基组成和发酵条件,旨在为MPs的液态发酵生产提供参考。主要研究结果如下:(1)影响MPs合成的营养物质种类和浓度的单因素实验结果表明:以葡萄糖为唯一碳源时可获得较高的菌丝体浓度和MPs产量,以甘油为唯一碳源时可促进MPs的合成,但是对菌体的合成影响不显著,葡萄糖和甘油的适宜浓度分别为120 g/L和60 g/L;适宜的氮源为KNO3和蛋白胨,适宜浓度分别为2 g/L和10g/L;KH2
