新世纪中国美食纪录片流变发展研究

【摘要】:在资本、信息、制度、政策、民意激流勇进地淘洗下,纪录片内核更迭始发于新旧产业转型的缝隙间,短短5年中国美食纪录片经历了“品牌元年”、“平台元年”、“公众元年”三个阶段。新千年以来,中国纪录片面对市场壁垒徘徊不前,因此促使后续的政策制度和市场制度(标准/价值/规范体系)更为精准、直接地着力。直至美食纪录片的代表《舌尖上的中国》的热播和台网联动效应的助推成就美食纪录片第一块金字招牌——“舌尖品牌”的诞生,继而拓开了本土美食文化纪录片的多样化格局。对此的描述和阐释,本文引入了“势”这一概念,按《现代汉语词典》的解释,“势”的本身即“力量及其呈现的趋势”,表现在“台前显现”的政策支持、媒体话语、业界与公众的关注,也体现在“幕后支撑”的投资、制作、发行、收视等方面。从整体格局看,2012年的中国美食纪录片为整个纪录片的发展开创了一个高调的“起势”,继而在看似料峭的春寒之下,暗流涌动。引发各方势力谋定而后动,强势酝酿“蓄势”的征兆,它们共同指向产业新局的创造和规划,并且产生了一些意义非同小可的“破势”之举。本文将选取《舌尖Ⅰ》和《味道中国》分别作为2012至今中国美食纪录片的关键帧,以《舌尖Ⅰ》《舌尖Ⅱ》《舌尖上的新年》《舌尖Ⅲ》为范体,透析这个时间段中国美食纪录片产业发展的表现与内涵:探索《舌尖Ⅰ》的同期影片《中国美食探秘》;《舌尖Ⅱ》的姐妹篇《一城一味》;“舌尖大电影”的开拓篇《味道中国》;受舌尖系列启发而生成的“微纪录片”《日食记》以及成就“互联网+美食”新形式的《宅人食堂》等系列中国美食纪录片流变发展的处境与成因。
