【摘要】:正日落黄(sunset yellow)又名食用黄色3号,是一种水溶性偶氮类化合物~([1])。由于其化学性质稳定、成本低廉、色泽鲜艳、着色力强、配色方便而被广泛用于食品的加工行业。研究表明,偶氮类化合物在体内可代谢生成致突变原前体——芳香胺类化合物,芳香胺则可被进一步代谢活化后成为亲电子产物与DNA和RNA结合形成加合物而诱发突变~([2])。另外,偶氮类化合物还可被氧化诱导产生自由基,进而再与体内
[Abstract]:Sunset yellow (sunset yellow), also known as Edible Yellow 3, is a water-soluble azo compound ~ (1). It is widely used in food processing industry because of its stable chemical property, low cost, bright color, strong coloring power and convenient color matching. The results show that azo compounds can be metabolized to form mutagenic precursor aromatic amines in vivo, and aromatic amines can be further metabolized and activated to form electron-friendly products to form adducts with DNA and RNA, which induce mutation ~ (2). In addition, azo compounds can also be oxidized to produce free radicals, which in turn can be linked to in vivo
