影响高校食堂饮食安全主要因素及其改进对策

【摘要】:高校食堂食品安全问题大多是因高校内部内监督机制、食堂卫生安全意识、学校食堂私营化现象及营养配餐等问题而引发的,这些现实问题直接阻碍着高校饮食行业的发展。本研究从现实状况入手,着力分析影响高校食堂饮食安全的各种可能存在的因素,并试图深层次的纠其原因,从而提出更为有效的对策。具体如下: 高校食堂饮食安全问题主要体现在:一是食品安全,也叫食物安全,这里所说的食品是指已经过烹饪等加工手段处理过的能够直接食用的食品;二是就餐环境安全;三是食品原材料安全,包括所采购的物品各种残留药物是否超标。从调查结果来看,食品安全为主要问题。 高校食堂食品安全存在多方面隐患,一是食品安全存在在隐患,这是从当前食品大环境来考查的,也是主要食品卫生隐患;二是食堂就餐环境安全隐患;三是食品原料质量安全隐患。这三重隐患严重影响着高校食堂食品卫生安全。造成这些隐患的原因也是多方面的,有主客观原因,也有内外在原因,不同的原因又有其特殊性;各种原因交杂在一起,成为制约高校食堂饮食行业发展的矛盾“集合体”。 改善高校食堂饮食安全的对策需要按照特定的问题进行具体分析,从问题中找答案。为改善高校食堂饮食安全,本文提出了五种对策:一是改善高校食堂经营模式、二改善食堂管理体制、三是建设食品安全保障体系,四是将HACCP系统应用到高校食堂食品卫生安全管理中,五是加强食堂从业人员思想道教育;从这几个方面以达到解决高校食堂饮食安全的效果。
[Abstract]:Food safety problems in university canteens are mostly caused by internal supervision mechanism, hygiene and safety consciousness of canteen, privatization of school canteen and nutritious food distribution. These practical problems directly hinder the development of catering industry in colleges and universities. From the point of view of reality, this study tries to analyze the possible factors that affect the food safety of university canteens, and tries to correct the causes in a deeper level, so as to put forward more effective countermeasures. The details are as follows: The main problems of food safety in university canteen are as follows: first, food safety, also called food safety, the food here refers to the food that has been processed through cooking and other processing means, and the second is the safety of dining environment; Third, the safety of food raw materials, including the procurement of various residual drugs are beyond the standard. From the survey results, food safety is the main problem. There are many hidden dangers in the food safety of university canteen, one is the hidden danger of food safety, which is examined from the current food environment, and the other is the hidden trouble of dining environment. Third, the quality and safety of food raw materials. These three hidden dangers seriously affect the food hygiene and safety in the university canteen. The causes of these hidden dangers are also various, there are subjective and objective reasons, but also there are internal and external reasons, different reasons have their particularities; all kinds of reasons are mixed together, become the contradiction "collective" that restricts the development of the catering industry in the university canteen. The countermeasures to improve the food safety in university canteens need to be analyzed according to the specific problems and to find out the answers from the problems. In order to improve the food safety of university canteen, this paper puts forward five countermeasures: one is to improve the management mode of university canteen, the other is to improve the canteen management system, and the third is to construct the food safety guarantee system. The fourth is to apply the HACCP system to the food hygiene and safety management of the university canteen, and the fifth is to strengthen the ideological and moral education of the staff in the canteen, so as to achieve the effect of solving the food safety in the university canteen from these aspects.
