熟肉制品销售环境条件的研究

【摘要】:我国是肉类生产的大国,熟肉制品更是人们喜爱的食品,其特点是品种多样、味道独特、食用方便等。但熟肉制品在销售过程中存在着货架期短,销售场地卫生条件差、污染严重等问题,直接影响消费者的购买欲望和身体健康。 本试验要确定适宜销售熟肉制品的温度和光照条件,不仅要延长熟肉制品的货架期,同时还要保证产品的口感与营养价值,以满足广大消费者的各种需求,从而提高经济效益。 本试验以在熟肉制品中有代表性的酱猪肘为主要的研究对象,对其销售的温度和光照条件加以选择控制,主要内容及结果有: (1)研究不同销售温度对熟肉制品微生物指标的影响。分别在不同温度4℃、8℃、12℃、16℃、20℃、24℃、32℃条件下存放熟肉制品,观察并记录其细菌总数和大肠菌群的变化。得出结论:低温销售能有效抑制微生物的生长。 (2)研究不同销售温度对熟肉制品颜色的L*、a*、b*值的影响。分别在不同温度4℃、8℃、12℃、16℃、20℃、24℃、32℃条件下存放熟肉制品,观察并记录其颜色L*、a*、b*值的变化。得出结论:低温销售是熟肉制品颜色变化缓慢。 (3)研究不同销售温度对熟肉制品的剪切力的影响。分别在不同温度4℃、8℃、12℃、16℃、20℃、24℃、32℃条件下存放熟肉制品,观察并记录其剪切力的变化。得出结论:销售环境的温度为4℃时,熟肉制品剪切力是人们可以接受的。 (4)研究在室温条件下光照对酱猪肘颜色变化的影响。分别在普通照明灯和节能灯的光照条件下储藏熟肉制品,观察其颜色的L*、a*、b*值的变化。得出结论:在节能灯下的熟肉制品颜色比普通照明灯下的颜色变化缓慢。再选用不同功率为5W、13W、20W的节能灯作为光源,观察其颜色的L*、a*、b*值的变化,选出20W节能灯作为光源适宜熟肉制品的销售。 从而确定4℃的环境温度、20W节能灯的光照条件,最有利于熟肉制品的销售,既保持产品的口感与营养价值,又有效的控制产品颜色的变化,增强消费者的购买欲望,提高经济效益。
[Abstract]:China is a large country of meat production, cooked meat products is a favorite food, its characteristics are variety, unique taste, convenient to eat, and so on. However, in the course of selling cooked meat products, there are some problems, such as short shelf life, poor sanitary conditions of sales sites, serious pollution and so on, which directly affect consumers' desire to buy and their health. In order to determine the suitable temperature and light conditions for the sale of cooked meat products, not only the shelf life of cooked meat products should be extended, but also the taste and nutritional value of the products should be guaranteed, so as to meet the needs of consumers and improve economic benefits. In this experiment, Pork Hock Seasoned with Soy Sauce, which is representative in cooked meat products, was used as the main research object, and the temperature and light conditions of its sale were selected and controlled.
