2013-2016年济南市膳食食品中铝残留量监测及人群暴露评估
[Abstract]:Objective to monitor the aluminum content in diet and evaluate the exposure risk. Methods the aluminum residues in 5 kinds of diets sold in Jinan City from 2013 to 2016 were monitored and the amount of aluminum exposure induced by diet was evaluated and the safe intake of daily diet was calculated. Results Aluminium residues in 228 samples of 5 classes were monitored, the average value was 88.59 mg/kg, and the total detection rate was 92.54. The average value of noodle food was 84.95 mg/kg, the detection rate of Youtiao was 96.35, and the highest value of Youtiao was 293.79 mg/kg,. The average value of aluminum in aquatic products and its products was 214.09 mg/kg, and the detection rate was 63.33. The highest residual amount of jellyfish was 1 008.00 mg/kg,. The average value of vermicelli was 70.94 mg/kg, and the rate of exceeding the standard was 95.00% and 15.00%, respectively. The average value of visceral organs was 35.79 mg/kg,. The average value of bread and peach pastry products was 11.66 mg/kg, the detection rate was 100.00000, but there was no excess. The average weekly intake of aluminum by diet was 3.04 mg/ (kg BW);. The aluminum exposure of noodle products was the highest, followed by aquatic products and their products, which were 2.46 and 0.40 mg/ (kg BW)., respectively. Conclusion Youtiao and jellyfish are in excess of standard in Jinan, and the exposure level of dietary aluminum is higher and the risk is higher.
