一起菜豆引起食源性急性胃肠炎疾病暴发的病例对照研究

【摘要】:目的应用流行病学方法,对某企业一起菜豆引起暴发食源性急性胃肠炎的原因进行调查分析,旨在为预防类似的事件再次发生。方法将有共同饮食史者进行个案调查,并通过病人病例对照研究分析危险因素。结果本次事件发病28人,罹患率9.39%,临床症状以恶心、呕吐为主,无发热,平均潜伏期3.0 h,暴露危险因素为食用刀豆炒肉片食品。结论根据流行病学调查以及病例对照研究、结合病人临床症状,确认此次事件为一起刀豆加工不当造成的中毒事件。
[Abstract]:Objective to investigate and analyze the causes of acute gastroenteritis caused by bean outbreak in an enterprise with epidemiological methods in order to prevent the recurrence of similar events. Methods the patients with common diet history were investigated and the risk factors were analyzed by case-control study. Results the incidence rate was 9.39%. The main clinical symptoms were nausea, vomiting, no fever, the average incubation period was 3.0 hours. The risk factor of exposure was consumption of concanavous bean and fried meat. Conclusion according to the epidemiological investigation and case-control study, combined with the clinical symptoms of the patients, the incident was confirmed as a toxic event caused by improper processing of concanavan.
