2012-2016年贵州省谷类及其制品化学污染物监测结果分析

【摘要】:目的了解2012-2016年贵州省谷类及其制品中化学污染物残留情况,为谷类及其制品的监管和食品安全提供科学依据。方法 2012-2016年随机采集谷类及其制品1 546份,按照《国家食品中化学污染物及有害因素监测工作手册》检测化学污染物含量,依据中国国家标准GB2760-2014《食品添加剂使用标准》、GB2762-2012《食品中污染物限量标准》进行判断。结果监测的1 546份谷类及其制品,超标率为5.82%,检出率为69.66%。监测的7种谷物及其制品中检出率最高的是稻谷,超标率最高的是小麦粉,超标率为9.24%;监测的4种化学物中检出率最高的是元素类,超标率最高的是食品添加剂,超标率为7.8%;餐饮环节的样品超标率高于其他环节;散装谷物及其制品检出和超标样品均比定型包装的高。结论近5年贵州省监测的谷物及其制品化学污染物超标率呈下降趋势。
[Abstract]:Objective to investigate the residues of chemical pollutants in cereals and their products from 2012 to 2016 in Guizhou Province, and to provide scientific basis for the supervision and food safety of cereals and their products. Methods 1 546 cereals and their products were randomly collected from 2012 to 2016. The contents of chemical pollutants were detected according to the Manual of Monitoring Chemical pollutants and harmful factors in National Food. The contents of chemical pollutants were determined according to the National Standard for the use of Food Additives (GB2760-2014). GB2762-2012 limit Standard for contaminants in Food was used to judge. Results among the 1 546 cereals and their products monitored, the rate of exceeding the standard was 5.82, and the detection rate was 69.66. Among the 7 kinds of cereals and their products, the highest detectable rate was rice, the highest rate was wheat flour, and the exceeding rate was 9.24%. Among the four chemicals monitored, the highest detectable rate was element, the highest was food additive, the rate of exceeding standard was 7.8, the rate of food and beverage samples exceeded the standard was higher than that of other links. Bulk grains and their products were detected and exceeded the standard samples are higher than the final packaging. Conclusion the chemical pollutant rate of cereals and its products monitored in Guizhou Province decreased in the past 5 years.
