北京老字号餐饮企业用人文化的历史流变与传承发展:以全聚德为例

【摘要】:北京老字号餐饮企业是北京城市文化的标签之一,也是"首善之都"未来发展的重要部分。文化是全聚德能成为"百年老字号"的根本原因,也是发展过程中贯穿始终的核心要素。本文以全聚德为例,探究老字号餐饮企业的历史流变和传承发展,从用人角度分析全聚德在初创期、扩张期、转型期和现代化阶段用人文化的变化,并从其用人制度的历史沿革和发展趋势视角为老字号餐饮行业提供有益建议。
[Abstract]:Beijing time-honored catering enterprises is one of the Beijing City Cultural label, is also an important part of the "top philanthropist of" future development. Culture is Quanjude can become the root causes of the "old", but also the development of the core elements throughout the process. In this paper, Quanjude, for example, explore the time-honored catering enterprises the historical evolution and the inheritance and development of Quanjude in the start-up period from the angle of the expansion period, with the change of culture transition and modernization stage, and from the perspective of historical evolution and development trend of the system provide useful suggestions for the time-honored catering industry.
