民族地区餐饮业发展研究

【摘要】:随着我国改革开放的进一步深入,基础设施建设投资造成的产能过剩的问题日益严峻,我国经济正处在重要战略机遇期,呈现出新常态,优化经济结构迫在眉睫,发展第三产业将成为转型发展的重要手段之一。餐饮业是我国第三产业的重要组成部分,又承担着拉动就业、促进社会和谐、拉动农业发展、弘扬中华传统文化等方面的重要责任,所以实现餐饮业又好又快发展意义重大。特别是我国民族地区餐饮业发展往往比较落后,又要面对发达地区企业和外资企业的激烈竞争,如何在这个激烈的竞争环境中图谋发展,需要结合民族地区现状,进行深入的分析,找出关键问题,才能得到结论。本文以大理市为例,通过查询大理地区相关饮食历史文献记载,总结出大理市餐饮业具有历史积淀深厚、生态资源丰富、民族特色鲜明三个方面的核心特色,具有“走出去”的巨大潜质。随后本文结合实地调查,对大理市餐饮业的现状进行深入的分析,认为大理市餐饮业发展受到政策扶持力度大,政策环境较好,行业规模在近九年中持续扩大,发展势头迅猛,餐饮业聚集已经初具规模,主要集中在行政区、商业区、滨海区、居民区和旅游区,餐饮种类也日趋丰富,可以说大理市餐饮业取得了较好的发展成果。但大理市餐饮业的发展水平仍然较低,本文提出大理市餐饮业发展面对的问题有五点,主要是发展环境有待优化,融资渠道缺乏,市场竞争环境恶劣,政府权责制度混乱;品牌建设落后,没有充分利用三大核心特色;供应链建设程度落后,缺少具有上游影响力的龙头企业,现有供应链运作效率低下;企业规模较小,多以中小微型企业为主,缺少引领行业发展的龙头企业;餐饮业用工问题难,员工流动性大,忠诚度低,留不住关键性人才。最后,本文在分析问题的基础上,结合品牌识别理论和供应链体系建设理论,有针对性的提出大理市餐饮业发展路径,以期充实相关理论成果。
[Abstract]:With the further deepening of China's reform and opening up, the problem of overcapacity caused by infrastructure construction investment is becoming increasingly severe. Our economy is in an important strategic opportunity period, showing a new normal, and optimizing the economic structure is urgent.The development of tertiary industry will become one of the important means of transformation and development.Catering industry is an important part of the tertiary industry of our country, and it also undertakes the important responsibility of stimulating employment, promoting social harmony, stimulating agricultural development and carrying forward Chinese traditional culture, so it is of great significance to realize the fast and sound development of catering industry.In particular, the development of the catering industry in ethnic minority areas in China is often relatively backward, and we have to face the fierce competition between enterprises in developed regions and foreign-funded enterprises. How to seek development in this fierce competitive environment needs to be combined with the current situation in ethnic regions.The conclusion can be reached by in-depth analysis and finding out the key problems.This paper takes Dali City as an example and summarizes the core characteristics of Dali catering industry in three aspects: deep historical accumulation, rich ecological resources and distinct national characteristics by consulting the relevant dietary historical documents in Dali area.Has the huge potential of "going out".Then this paper analyzes the present situation of catering industry in Dali city, and points out that the development of catering industry in Dali city is supported greatly by the policy, the policy environment is better, the scale of the industry has been expanding continuously in the past nine years, and the development momentum is swift and violent.The gathering of catering industry has begun to take shape, mainly concentrated in administrative districts, business districts, coastal areas, residential areas and tourist areas, and the types of catering are becoming more and more abundant, so it can be said that the catering industry in Dali has achieved better development results.However, the development level of catering industry in Dali is still relatively low. This paper points out that there are five problems facing the development of catering industry in Dali. The main problems are that the development environment needs to be optimized, the financing channels are lacking, the market competition environment is bad, and the government power and responsibility system is chaotic.Brand construction is backward, not making full use of the three core characteristics; the level of supply chain construction is backward, lack of upstream influence of leading enterprises, the existing supply chain operation efficiency is low; the scale of enterprises is small, mostly small and medium-sized micro enterprises,Lack of leading enterprises to lead the development of the industry; catering industry employment problems, staff mobility, low loyalty, can not retain key talent.Finally, based on the analysis of the problems, combined with the brand identification theory and supply chain system construction theory, the paper puts forward the development path of catering industry in Dali City, in order to enrich the relevant theoretical results.
