【摘要】：民以食为天,作为一个历史悠久、人口数量庞大的国家,我国的餐饮业具备极长的历史与文化,具备最广阔的市场需求与发展潜力。然而,改革开放历经数年,洋快餐在中国摧城拔寨,市场占有率逐步扩大,营业额惊人,本土化的中国餐饮业却始终没有成长出一个足够强大的品牌。连锁经营模式作为当今商业活动中最富有活力和最具成长潜力的经营方式,是成就肯德基、麦当劳,乃至小肥羊、真功夫等餐饮行业龙头的利器。而作为中国相对容易作业标准化和经营连锁化的餐饮品类之一——火锅行业,是这篇论文要着重分析的。企业流程再造是20世纪80年代初起源于美国的一种企业管理思想,是美国主要工业企业在全面学习日本制造业优秀管理经验的基础上发展起来的一种全面变革企业经营管理、提高企业整体竞争力的管理理论、思想。流程再造的生命力在于与企业经营战略目标相结合,适应“3C”变化而进行的变革,而不仅仅为了取得一点一滴的微小成本降低或绩效改善。本次再造项目侧重于战略层面的再造,在经营形式的选择的基础上进行组织结构再造,并配合人力资源体系改造和企业文化重塑,改造的目标是使企业的业绩取得具有战略性、显著性的提升。本文首先从流程再造的概念导入,对该理论在国内外的研究现状进行了描述分析,对其内涵进行论述,为论文奠定了理论基础。其次运用管理学、战略管理、流程再造的理论,结合A火锅连锁企业的现状、管理困境和需求,系统探讨了基于企业流程再造的策略、原则和步骤,提出切实可行的流程再造改进措施与预期效果,最后对流程再造在企业应用的效果进行评价并坚持持续完善的理念,以期企业经营业绩产生大幅改善,并逐渐实现战略目标。
[Abstract]:As a country with a long history and a large population, the catering industry of our country has a long history and culture, and has the broadest market demand and development potential. However, after several years of reform and opening up, foreign fast food has gradually expanded its market share in China, and its turnover is amazing. However, the local Chinese restaurant industry has never grown into a strong enough brand. Chain management mode is the most dynamic and the most potential business mode in today's business activities. It is the leading weapon of KFC, McDonald's, even Little Sheep, Real Kung Fu and so on. As one of the relatively easy operation standardization and chain catering industry in China, this paper should focus on the analysis of hot pot industry. Business process Reengineering (BPR) is a kind of enterprise management thought that originated in the United States in the early 1980s. It is a kind of comprehensive reform on the basis of studying the excellent management experience of Japanese manufacturing industry in the major industrial enterprises of the United States. The management theory and thought of improving the overall competitiveness of enterprises. The vitality of process reengineering lies in the change of "3C", not only in order to achieve a small cost reduction or performance improvement. This reengineering project focuses on reengineering at the strategic level, reengineering the organizational structure on the basis of the choice of business forms, and cooperating with the transformation of human resources system and corporate culture. The goal of the reengineering is to make the enterprise achieve a strategic performance. Significant ascension. This paper first introduces the concept of process reengineering, describes and analyzes the current research situation of the theory at home and abroad, and discusses its connotation, which lays a theoretical foundation for the paper. Secondly, by applying the theories of management, strategic management and process reengineering, combining with the current situation, management dilemma and demand of chain-A chain enterprises, this paper systematically discusses the strategies, principles and steps of business process reengineering based on the theory of management, strategic management and process reengineering. The paper puts forward feasible improvement measures and expected effects of process reengineering, and finally evaluates the effect of process reengineering application in enterprises and adheres to the idea of continuous improvement, in order to bring about substantial improvement of business performance and gradually realize the strategic goal.
