洛阳餐饮旅游集团发展战略研究

【摘要】:餐饮行业是一个完全竞争的行业,市场空间巨大,有极大的发展潜力,但同时人才缺乏、相关标准和法律法规还不完善、资源浪费严重、卫生问题突出、食物中毒事故频发“四高一低”(税费高、原材料价格高、人工成本高、房租高,企业利润越来越低)问题也在不断考验着餐饮企业经营者。因此,在市场机遇与挑战并存的环境中,制定适合企业发展的长远战略,突破企业发展瓶颈引导企业理性发展具有里程碑的意义。 本文通过对国内外餐饮企业战略管理的文献整理探索出餐饮企业战略研究所涉及到的主要问题,对洛阳餐饮旅游集团目前发展现状、内外部发展环境及其经营目标进行分析,得出该集团目前所面临的主要问题、发展瓶颈及制定长远战略的必要性。 文章主体部分基于洛阳餐饮旅游集团现状,通过波特“五因素模型”分析目前洛阳餐饮旅游集团面临着机遇与挑战并存的微观市场条件;通过波士顿矩阵分析方法对目前的核心业务进行分析,认为餐饮仍是未来发展的重点,汉庭快捷酒店能够为企业发展提供相应的资金支持,申诚快捷酒店可适当地舍弃,丹之舞文化传播、花瓣雨、至爱婚庆、旅游百事通和溪鸣庄园在未来有较强的市场成长性,但是目前市场占有率不足,,需加大投入力度;通过未来发展趋势分析方法分析出能指导洛阳餐饮旅游集团未来发展的“全聚德”、“宴天下”品牌输出、餐饮+前后端产业链、餐饮+地产(商业地产和休闲地产)的发展战略,并分析了相应的企业经营策略、人力资源策略和财务策略及对实施过程的评价与控制。
[Abstract]:The catering industry is a completely competitive industry, with a huge market space and great potential for development. But at the same time, the lack of talents, the imperfect standards and laws and regulations, the serious waste of resources and the outstanding health problems, Food poisoning accidents frequently occur "four high and one low" (high taxes, high prices of raw materials, high labor costs, high rent, lower and lower corporate profits) problems are also constantly testing the catering business operators. Therefore, in the environment where market opportunities and challenges coexist, it is significant to formulate a long-term strategy suitable for the development of enterprises and to break through the bottleneck of enterprise development to guide the rational development of enterprises. Based on the literature review of the strategic management of catering enterprises at home and abroad, this paper explores the main problems involved in the strategic research of catering enterprises, and analyzes the present development situation, internal and external development environment and management objectives of Luoyang Food Tourism Group. The main problems facing the group, the development bottleneck and the necessity of formulating long-term strategy are obtained. The main part of the article is based on the present situation of Luoyang Catering Tourism Group, and analyzes the microcosmic market conditions of Luoyang Catering Tourism Group which is facing both opportunities and challenges through Porter's "five factors Model". Through the analysis of the current core business through the method of Boston matrix analysis, it is considered that catering is still the focus of future development, Hanting Express Hotel can provide corresponding financial support for the development of enterprises, and Shen Cheng Express Hotel can give up appropriately. Dan dance culture spread, petals rain, love wedding, tourism Pepsi Tong and Ximing Manor have strong market growth in the future, but the current market share is insufficient, need to increase investment; Through the analysis of the future development trend, we can find out the "Quanjude", "banquet world" brand output, industry chain before and after catering, which can guide the future development of Luoyang Food & Tourism Group. The development strategy of catering real estate (commercial real estate and leisure real estate) is analyzed, and the corresponding enterprise management strategy, human resource strategy and financial strategy, as well as the evaluation and control of the implementation process are analyzed.
