【摘要】:随着我国人民生活水平的不断提高,人们对食品的安全程度越来越重视,食品冷链物流在其推动下得到了快速的发展。冷链物流,也叫低温物流,是以冷冻工艺学为基础、以制冷技术为手段的低温物流过程。由于生鲜食品易变质的特性,食品从产地收购或捕捞之后,在产品流通加工、运输、仓储、装卸、搬运、分销和零售过程中,要求各个环节必须紧密衔接,并配合以合适的设备、统一的管理,以使产品处于必需的低温环境下,以保证食品质量,减少食品损耗。由于冷链物流对技术含量、物流基础设施设备和操作都有较高的要求,很多食品企业为了节约成本,提高核心竞争力,往往倾向于选择将公司的冷链业务全部或者部分外包给能够提供专业冷链服务的第三方物流公司。目前市场上第三方冷链服务商众多,然而其提供的冷链物流服务参差不齐。冷链物流服务质量的好坏直接影响着企业的产品品质和顾客满意度,进而影响企业的持续发展与消费者的健康安全。因此,选择合适的物流合作伙伴对于冷链食品企业来说至关重要。 关于第三方物流供应商的选择已不是一个新话题,但是目前研究主要集中于宏观层面上的第三方物流服务商选择,而专门针对某一行业第三方物流服务商选择模型的研究,虽也有涉及,但总体较少。由于生鲜食品的特殊性,对于冷链物流,生产商除了要考虑服务价格和对分销渠道控制因素以外,更多是要考虑控制产品的品质、质量安全以及服务的时效性。这要求我们必须提出一套更适合冷链食品实际情况的第三方物流供应商评价指标体系,从而为食品企业对第三方冷链物流供应商进行有效的选择提供参考。 本文首先通过查阅文献,对前人在物流外包、第三方物流服务商选择指标与评价方法方面的研究进行总结,分析其优缺点。其次介绍了冷链物流与物流外包相关理论,结合我国冷链食品的特性以及其对冷链物流的特殊要求,通过深度访谈和问卷调研的方式,研究了冷链食品企业选择第三方物流合作伙伴的基本流程,构建了一套针对食品企业的冷链物流服务商选择指标体系。再次,对比国内外关于第三方物流供应商选择与评价中所使用的方法的优缺点,提出采用基于灰色关联度改进的AHP-TOPSIS法来选择和评价第三方物流服务商。最后,利用国内某食品生产企业选择冷链物流服务商的案例进行了分析研究,结果验证了所建模型的有效性,为我国冷链食品企业在选择物流服务商的决策方面提供了参考依据。
[Abstract]:With the continuous improvement of our people's living standards, people pay more and more attention to the safety of food, food cold chain logistics has been rapid development under its impetus. Cold chain logistics, also known as low temperature logistics. It is a low temperature logistics process based on freezing technology and refrigeration technology. Due to the perishable characteristics of fresh food, food is purchased or fished from the place of origin, and the products are processed, transported, stored and unloaded. In the process of handling, distribution and retailing, all links must be closely connected and coordinated with appropriate equipment and unified management to ensure the quality of food in the necessary low temperature environment. Reduce food loss. Due to the cold chain logistics technology content, logistics infrastructure equipment and operations have higher requirements, many food enterprises in order to save costs, improve core competitiveness. They tend to choose to outsource all or part of the company's cold chain business to the third party logistics company which can provide professional cold chain service. At present, there are many third-party cold chain service providers in the market. However, the cold chain logistics service is not uniform. The quality of cold chain logistics service directly affects the product quality and customer satisfaction. The sustainable development of enterprises and the health and safety of consumers will be affected. Therefore, it is very important to select suitable logistics partners for cold-chain food enterprises. The selection of third-party logistics suppliers is no longer a new topic, but the current research focuses on the choice of third-party logistics service providers on the macro level. The research on the selection model of third-party logistics service provider in a certain industry, although also involved, but the overall less. Because of the particularity of fresh food, the cold chain logistics. In addition to considering the price of services and control of distribution channels, manufacturers should consider controlling the quality of their products. Quality safety and timeliness of service. This requires us to put forward a set of evaluation index system of third-party logistics suppliers which is more suitable for the actual situation of cold-chain food. Therefore, it provides a reference for food enterprises to effectively select third-party cold chain logistics suppliers. First of all, through consulting literature, this paper summarizes the previous research on logistics outsourcing, third-party logistics service provider selection indicators and evaluation methods. Secondly, it introduces the theory of cold-chain logistics and logistics outsourcing, combined with the characteristics of cold-chain food and its special requirements for cold-chain logistics, through in-depth interviews and questionnaire investigation. This paper studies the basic process of selecting third-party logistics partners for cold-chain food enterprises, and constructs a set of cold chain logistics service providers selection index system for food enterprises. Thirdly. Compare the advantages and disadvantages of the methods used in the selection and evaluation of third-party logistics suppliers at home and abroad. This paper proposes to select and evaluate the third-party logistics service providers by using the improved AHP-TOPSIS method based on the grey correlation degree. Finally. The case of a domestic food production enterprise choosing cold-chain logistics service provider is analyzed and the results verify the validity of the model. It provides reference for Chinese cold chain food enterprises to choose logistics service providers.
