北京市高校食堂食品安全调查与检测分析

【摘要】:高校食堂食品安全问题一般体现在三个方面:一是食品原材料安全;二是食品加工过程中的食物安全;三是食堂就餐环境的安全。从餐饮行业整体情况来看,生物性污染(食源性疾病)、化学污染(包括农药兽药残留、天然毒素)、食品添加剂滥用是威胁食品安全的主要原因。学校食堂是发生细菌性食物中毒事件的高危餐饮场所,为了降低并消除食物中毒事件发生的可能性,亟需建立完善有效的学校食堂食品安全管理体系。本项目抽取北京地区的高校共89所,对其内部食堂中的成品菜(包括热菜和凉菜)进行抽样检测,分析高校食堂存在的食品食物安全隐患。对食堂中原材料蔬菜中的农药、生肉中的兽药残留进行抽样检测,分析高校食堂卫生食品原材料安全状况。对餐具洁净度进行抽样检测,调查餐具洗消质量,以分析食堂就餐环境的食品安全状况。检测结果表明:1.热菜的食品安全性要高于凉菜。2.凉菜样品中污染的微生物数量不同,主要由于其在流通及加工制作过程中所接触的环境不同造成。3.北京高校食堂大部分食材原料农药残留、兽药残留量在相关限量标准规定范围内,总体状况良好。4.所有采集的餐具中有91.80%样品的餐具洁净度属于可接受范围,因此学校食堂的餐具洁净度情况整体良好。5.在对淀粉、银耳、干黄花菜等样品中二氧化硫的检测时发现超标情况严重,其中干黄花菜的二氧化硫残留量最高,远远超过了相关国家标准限量(100mg/kg)的标准。因此高校食堂有必要对这类食材原料进行不定期的检测,防患于未然,食品安全监管部门应加强对原料来源进行监控,以确保学生的用餐安全。
[Abstract]:The problems of food safety in university canteen are generally reflected in three aspects: first, food raw material safety; second, food safety in the course of food processing; third, the safety of dining environment in canteen. From the overall situation of catering industry, biological pollution (foodborne diseases), chemical pollution (including pesticide veterinary drug residues, natural toxins), food additives abuse are the main reasons for threatening food safety. School canteen is a high risk food place for bacterial food poisoning. In order to reduce and eliminate the possibility of food poisoning, it is urgent to establish an effective food safety management system for school canteens. A total of 89 colleges and universities in Beijing were selected by this project. The finished dishes (including hot dishes and cold dishes) in their inner canteens were sampled and tested, and the hidden dangers of food safety in university canteens were analyzed. The pesticide in raw material vegetables and veterinary drug residue in raw meat in canteen were sampled and tested to analyze the safety of raw materials for hygienic food in university canteen. In order to analyze the food safety of dining room environment, the tableware cleanliness was sampled and the dishware quality was investigated. The test results show that 1: 1. Hot dishes are safer than cold dishes. The amount of contaminated microorganisms in the samples of cold vegetables is different, mainly due to the different environment in circulation and processing. The pesticide residue and veterinary drug residue of most raw materials in Beijing university canteen are in good condition. Of all the tableware collected, 91.80% samples of tableware cleanliness are acceptable, so the tableware cleanliness of the school canteen is in good condition as a whole. In the determination of sulfur dioxide in starch, Tremella, dried lily and other samples, it was found that sulfur dioxide exceeded the standard seriously, and the residue of sulfur dioxide in dried yellow lily was the highest, which far exceeded the national standard limit (100mg/kg). Therefore, it is necessary for the university canteen to carry on the irregular examination to this kind of food material raw material, prevents the trouble in the early stage, the food safety supervision department should strengthen to the raw material source to carry on the control, in order to ensure the student's meal safety.
