校内星级酒店实训基地的运行机制分析——以百川花园酒店为例

【摘要】：由山东旅游职业学院出资建设的四星级百川花园酒店,在面向市场经营的同时,承担了学校饭店管理系、营养与烹饪系等系部酒店管理相关专业学生的实习任务,学校相关课题研究,教学成果展示等。参与实训的学生在酒店餐饮、房务部门进行实习实训,学习酒水营销、厨房设备、菜品知识,熟悉总办、人事、文秘等工作岗位流程。
[Abstract]:The four-star Baichuan Garden Hotel, which is funded by Shandong Tourism Vocational College, is facing the market and has assumed the internship task of the hotel management department, the nutrition and cooking department and other departments of the school, as well as the students majoring in hotel management. The school related topic research, the teaching result display and so on. Students who participate in the training in hotel catering, room department practice training, study wine marketing, kitchen equipment, food knowledge, familiar with the general office, personnel, secretarial and other job processes.
