【摘要】:近几年,与乳制品相关的食品安全问题不断出现,引起了消费者的重点关注。乳制品因其自身产品的特殊性,对加工、储藏、运输、配送等冷链物流环节的要求极高,其在冷链物流过程中更容易发生安全事故。本文从乳制品冷链物流系统风险评价的视角,对乳制品冷链物流系统中的风险、影响因素、评价方法和体系等展开研究。论文在对乳制品冷链物流国内外相关文献梳理的基础上,对跨区域乳制品冷链系统的仓库储存、长途运输等物流作业流程进行了细致的分析,对各个环节中温度、湿度、时间等影响乳制品安全的关键因素进行定性的分析。然后通过对比常用综合评价方法,结合各种风险性评价方法的适用性及优缺点,确定了GO-FLOW方法作为本文风险定量计算的基本方法,并运用GO-FLOW方法,对跨区域乳制品冷链物流分不完全冷链和完全冷链进风险性评价。结合具体案例,对冷链物流系统各环节的可靠性和故障率进行具体的定量分析,得出了系统的安全可靠度及产生风险的关键物流环节,确定了影响乳制品冷链物流系统安全的最关键因素。通过改进影响该系统安全性的最关键因素的系统参数,再次运用GO-FLOW法对修正后的系统进行风险性评价,发现修正后系统的安全性得到明显的提升,从而验证了乳制品冷链物流风险的关键因素,提出了乳制品冷链物流系统的风险防范具体的应对措施。
[Abstract]:In recent years, food safety issues associated with dairy products continue to emerge, attracted the focus of attention of consumers. Because of the particularity of dairy products, its products for processing, storage, transportation, distribution and other aspects of the cold chain logistics requirements, the more easily in the process of cold chain logistics in this paper from the accidents. Dairy product cold chain logistics system from the perspective of risk assessment, risk factors of dairy products, cold chain logistics system, research the evaluation method and system. Based on the dairy product cold chain logistics related literature review, the cross regional dairy products cold chain system of warehouse storage, long-distance transportation such as logistics operation process are analyzed, the temperature and humidity, in all aspects, analysis of key influence factors of the safety of dairy products are qualitative. Then by comparing the commonly used comprehensive evaluation method, combined with a variety of risk The applicability and advantages and disadvantages of the evaluation method, the basic method to determine the GO-FLOW method as the quantitative risk, and using the GO-FLOW method, the cross regional dairy product cold chain logistics can not fully and completely into the cold chain cold chain risk assessment. Combined with the specific case, specific quantitative analysis of the reliability and failure rate of the cold chain logistics of all parts of the system, the key link of logistics system reliability and safety risk, determine the key factors affecting the dairy product cold chain logistics system security. The key factors of system parameters affect the safety of the system is improved by using GO-FLOW method, again to carry out the risk assessment system after the correction, found safety after correction system has been significantly improved, which proves the key factors of dairy product cold chain logistics risk, put forward risk dairy products cold chain logistics system Take precautions against specific measures.
