【摘要】：新疆是一个少数民族聚居的地方,同时当地又居住着大量的穆斯林群众。当地居民受到风俗习惯和饮食习惯的影响,将牛羊肉作为主要的肉食产品。穆斯林群众特殊的风俗习惯导致只有少数种类的肉食可以作为牛羊肉的替代品,所以牛羊肉的地位是无法被完全取代的。因此,稳定牛羊肉的市场价格,保障牛羊肉的正常有序供应,是项举足轻重的工作。本文以乌鲁木齐市居民为调查对象,通过认真的问卷设计和较大范围的市场调查,期望能够客观的了解乌鲁木齐市牛羊肉价格变化对消费者购买行为的影响,提出相应的政策建议。首先,本文介绍了研究的背景和意义、研究内容、国内外研究的进展、研究思路以及研究方法。其次,总结了新疆牛羊肉生产消费历程和现状,包括新疆和乌鲁木齐市牛羊肉生产情况、居民牛羊肉消费情况等。再次,总结乌鲁木齐市牛羊肉价格变化特征,并且对乌鲁木齐市牛羊肉价格变化的主要原因进行分析。最后,在问卷调查的基础上对影响居民牛羊肉购买行为因素进行实证分析。研究认为,牛羊肉价格呈现上涨趋势、价格受生产成本影响较大、消费呈刚性需求、供需矛盾突出、居民家庭牛羊肉消费支出受多方面因素影响。文章结尾,根据上述结论提出相应的对策:加大对牛羊肉产业的扶持力度、完善牛羊肉储备制度、发挥地缘优势扩大周边国家牛羊肉进口、转变消费观念、提高居民整体文化水平。
[Abstract]:Xinjiang is a place where ethnic minorities live, and at the same time there are a large number of Muslim people living there. The local residents are influenced by customs and eating habits. Take beef and mutton as the main meat product. Muslim people's special customs and habits lead to only a few kinds of meat can be used as a substitute for beef and mutton, so the status of beef and mutton can not be completely replaced. It is an important task to stabilize the market price of beef and mutton and to ensure the normal and orderly supply of beef and mutton. Expect to be able to objectively understand the impact of the price changes of beef and mutton in Urumqi on consumer buying behavior, and put forward the corresponding policy recommendations. First, this paper introduces the background and significance of the research, research content. Domestic and foreign research progress, research ideas and research methods. Secondly, summarized the production and consumption of beef and mutton in Xinjiang, including Xinjiang and Urumqi beef and mutton production. Thirdly, summarize the characteristics of the price change of beef and mutton in Urumqi, and analyze the main reasons of the price change of beef and mutton in Urumqi. Finally. On the basis of questionnaire survey, this paper makes an empirical analysis on the factors that affect the purchase behavior of beef and mutton. The research shows that the price of beef and mutton is rising, the price is greatly affected by the production cost, and the consumption is rigid demand. The contradiction between supply and demand is prominent, and the household consumption expenditure of beef and mutton is affected by many factors. At the end of the article, the corresponding countermeasures are put forward according to the above conclusions: to strengthen the support to the beef and mutton industry, and to perfect the reserve system of beef and mutton. Expand the import of beef and mutton in neighboring countries, change consumption concept and improve the overall cultural level of residents.
