食品可追溯系统的应用对消费者食品安全信心的影响研究

【摘要】:食品安全是世界各国面临的新兴问题,食品可追溯系统为解决这个问题提供可能。研究食品可追溯系统的应用对消费者食品安全信心的影响,在理论上是对消费者食品安全信心影响因素的一次拓展,在实践上,政府及食品生产商可据此针对消费者心理特点,制定重振消费者食品安全信心策略及合理改进现有食品可追溯系统。在食品可追溯系统的应用对消费者食品安全信心的影响研究过程中,区分信心为乐观维度与悲观维度不容忽视,食品可追溯系统的应用对消费者食品安全信心的不同纬度影响存在差异,区别研究尤为重要。 本文应用结构方程模型及实证研究相结合的方法,进行食品可追溯系统的应用对消费者食品安全信心的影响研究,从信任与感知风险视角解释其作用过程,并进行消费者关于食品安全感知风险在二者影响关系上的中介作用研究。在相关理论研究基础之上,提出本文的消费者食品安全信心影响模型,并提出两类假设:显著性假设和中介效应假设。然后设计问卷,,数据收集,对所提模型进行验证,最终得出本文研究结论。 研究发现:(1)降低消费者关于食品安全的感知风险或增强食品生产商的信任时,消费者食品安全信心就会增强,即信心的乐观维度增强,悲观维度降低(2)食品可追溯系统的应用对消费者关于食品安全的感知风险具有显著负向影响作用,但对于消费者对食品生产商的信任没有显著影响(3)消费者关于食品安全的感知风险在食品可追溯系统的应用对消费者食品安全信心悲观维度的影响关系上起着完全中介的作用。
[Abstract]:Food safety is an emerging problem facing countries around the world, and food traceability systems offer the possibility to solve this problem. Study the impact of the application of food traceability systems on consumer food safety confidence. In theory, it is an expansion of the factors affecting consumers' confidence in food safety. In practice, the government and food manufacturers can aim at the psychological characteristics of consumers. Develop strategies to reinvigorate consumer food safety confidence and reasonably improve existing food traceability systems. In the course of research on the impact of food traceability systems on consumer food safety confidence, The difference between optimistic dimension and pessimistic dimension can not be ignored. The application of food traceability system has different effects on consumer food safety confidence in different latitudes. In this paper, the influence of food traceability system on consumer food safety confidence is studied by using structural equation model and empirical research, and the process is explained from the perspective of trust and perceived risk. On the basis of relevant theoretical research, this paper puts forward the consumer food safety confidence impact model. Two kinds of hypotheses are put forward: significant hypothesis and intermediary effect hypothesis. Then the questionnaire is designed and the data is collected to verify the proposed model. Finally the conclusion of this paper is drawn. The study found that when the consumer reduces the perceived risk of food safety or increases the trust of food producers, consumer confidence in food safety increases, that is, the optimistic dimension of confidence. (2) the application of food traceability system has a significant negative effect on consumers' perceived risk of food safety. However, there is no significant effect on consumer trust in food producers. (3) consumers' perceived risk of food safety plays a role as a complete intermediary in the relationship between the application of food traceability system and the pessimistic dimension of consumer food safety confidence.
