不同采收贮藏方式对‘新梨7号’果实品质、果皮结构的影响

【摘要】:本试验以‘新梨7号’为试材,分别于8月5日与9月6日进行采摘,贮藏于室温,果窖,冷库三种环境中,周期性测定果实的各项理化指标和果皮结构,探讨不同采收贮藏方式对‘新梨7号’贮藏期品质和果皮结构的影响,为‘新梨7号’的贮藏保鲜提供理论依据和实践指导。结果表明:1、最近采收期,8月份采收的‘新梨7号’果实的硬度、有机酸含量、可溶性糖含量、叶绿素含量、固形物含量含量分别为分别6.46 kg/cm2、0.0154%、3.77%、0.42 mg/g、10.045%,9月份样的对应指标分别为6.094 kg/cm2、0.0149%、3.72%、0.33 mg/g、9.52%,8月份样的各项检查指标为均高于9月份样,延迟采收降低了‘新梨7号’果实品质。2、不同采收期不同贮藏环境中,‘新梨7号’果实的有机酸含量、硬度、叶绿素含量均呈现下降趋势;8月份采收的果实的可溶性糖含量在贮藏过程中呈先降后升的趋势,9月份样总体呈先升后降低再升高的趋势;8月份样的固形物含量呈先升后降再升高的趋势,9月份样则呈先降后升的趋势,其中室温环境中的可溶性糖和可溶性固形物含量变化最大。3、‘新梨7号’果实在贮藏过程有明显的呼吸高峰,符合呼吸跃变型果实的特点。采收期和贮藏环境影响果实的呼吸高峰,与8月份采收的‘新梨7号’相比,9月份样呼吸高峰出现的时间晚,高峰时的呼吸速率低;不同的贮藏环境对呼吸高峰的影响不同,室温中环境对呼吸高峰的影响主要体现在呼吸高峰出现时的呼吸速率,对不同采收期的果实呼吸高峰出现的时间影响不大,果窖和冷库环境则既影响果实呼吸高峰出现的时间,又影响呼吸高峰的速率,冷库和果窖环境可以明显推迟‘新梨7号’果实呼吸高峰的出现,对‘新梨7号’的贮藏效果更好。4、同一贮藏条件下9月份样各果皮组织结构厚度均大于8月份样的值。不同贮藏条件下,其蜡质层、角质层、表皮细胞、果皮总厚度变化较明显。果窖与冷库环境下,可以明显看出蜡质、角质、木栓层细胞变化明显,其厚度均有所增加,表皮细胞与木栓层细胞组织完整,排列紧密,贮藏效果优于室温环境。
[Abstract]:In this experiment, 'Xinli 7' was harvested on August 5 and September 6, respectively, and stored in room temperature, fruit cellar and cold storage. The physicochemical indexes and pericarp structure of fruits were determined periodically.The effects of different harvest and storage methods on the quality and pericarp structure of 'Xinli 7' during storage period were discussed, which provided theoretical basis and practical guidance for the storage and preservation of 'Xinli 7'.The results showed that the hardness, organic acid content, soluble sugar content, chlorophyll content of 'Xinli 7' fruit collected in August, the most recent harvest period, were determined.Delayed harvest decreased the fruit quality of 'Xinli 7', and decreased the content of organic acid and hardness of 'Xinli 7' fruit in different harvest periods and different storage environments.The content of soluble sugar in the fruit harvested in August decreased first and then increased during storage. The total content of chlorophyll in September increased first and then decreased and then increased.The trend of rising first and then descending and then rising was that in September, the sample showed a trend of first decreasing and then rising.The content of soluble sugar and soluble solids changed the most in room temperature environment. The fruit of 'Xinli 7' had obvious respiration peak during storage, which was consistent with the characteristics of respiratory jump fruit.The harvest period and storage environment affected the respiration peak of fruit. Compared with 'Xinli 7' harvested in August, the respiration peak in September appeared later and the respiration rate at peak was lower, and different storage environment had different effects on respiration peak.At room temperature, the effect of environment on respiration peak was mainly reflected in the respiration rate at the time of peak respiration, but it had little effect on the time of peak respiration of fruit at different harvest periods, while the fruit cellar and cold storage environment affected the time of peak respiration of fruit.The rate of respiration peak was also affected, and cold storage and fruit cellar environment could obviously delay the emergence of respiration peak of 'Xinli 7' fruit.The storage effect of 'Xinli 7' was better than that of 'Xinli 7'. Under the same storage condition, the thickness of tissue structure of each peel in September was greater than that in August.Under different storage conditions, the total thickness of waxy layer, cuticle, epidermis and pericarp changed obviously.Under the conditions of fruit cellar and cold storage, the changes of waxy, horny and cork layer cells were obvious, and the thickness of epidermal cells and cork layer cells were all increased, the tissue of epidermal cells and cork layer cells were complete, arranged closely, and the storage effect was better than that of room temperature environment.
