生活美学观照下的幼儿园食育研究

【摘要】:生活美学是以生活美作为研究对象的实用美学学科,更是一种对生活态度的追求。幼儿园的食育,简单地说,即与饮食活动相关的教育,以食育之、寓教于食,主要包括饮食教育和饮食教育过程中所涉及的其他各方面的教育。本研究主要运用了观察法和访谈法,用目的性抽样的方法选取了两所桂林市省级示范性幼儿园,通过调查幼儿园食育的管理制度、幼儿园食育内容及幼儿园食育组织形式等情况,了解幼儿园食育现状,以此为载体,讨论生活美学在幼儿园食育环节中的渗透情况,分析幼儿园食育与生活美学契合过程中存在的问题,探讨如何运用生活美学观念改进幼儿园食育中存在的不和谐现象,并为幼儿园食育的和谐开展提出相关建议。本文共由五部分组成:第一部分为绪论。阐述了本研究的选题缘由,对相关研究成果的述评,相关概念,本研究的目的与意义,研究的设计思路和研究步骤。第二部分从幼儿园饮食管理制度、食育内容及食育开展形式方面陈述了幼儿园食育现状。幼儿园饮食管理制度包括了幼儿园食材使用管理制度、饮食制作与食用的环境管理制度及厨房从业人员的管理制度制度。幼儿园食育的内容有:幼儿饮食习惯的养成、幼儿对食物及营养的认识、传统饮食文化的传承、惜食教育。幼儿园食育的组织形式有:幼儿进餐活动、种植园的生活体验活动、跨班游戏活动、“快乐小厨房”活动室中的集体教学活动以及美食主题活动。第三部分分析了生活美学在幼儿园食育中的渗透情况。主要体现在:饮食安全操作,饮食的营养搭配,饮食的色、味、形所体现出来饮食之美;教室环境的美化所呈现的环境之美;对幼儿礼仪举止的培养及各种活动中对幼儿身体和谐生长的关注,所体现出对幼儿身心和谐之美;幼儿通过为他人服务和对蔬菜的护理过程中体验生活中的劳动之美。第四部分以生活美学视角审视幼儿园食育,分析了幼儿园食育美中不足之处及幼儿园食育与生活美学契合的影响因素。幼儿园食育美中不足主要体现在:饮食的造型与餐具美的呈现不足,幼儿进餐环境的美化、幼儿与环境美之间的互动充分,教师对幼儿进餐时的呵斥与责骂,幼儿对劳动美的体验程度有待加强。幼儿园食育质量影响因素有:幼儿园食育管理观念因素,幼儿园物质环境支持因素及幼儿园教师综合素质因素。第五部分为幼儿园食育的和谐构建提出了一些建议。在丰富幼儿园食育管理制度的美学导向方面,幼儿园主管部门评估标准中生活美学观念的渗入,幼儿园食育管理制度中生活美学观念的渗入,以促进生活美学在幼儿园食育过程中的常规发展;在幼儿园应重视对教师的引进培养和指导方面,幼儿园应引进或定向培养综合素质强的幼儿教师,加强幼儿园对教师的指导与支持鼓励;在加强对幼儿园物质及空间环境的支持方面,幼儿园可以组建教室中小“小厨房”或独立小餐厅的建立,丰富食品模具、餐具及餐桌美化的材料;在提高幼儿园教师的管理与教育艺术方面,教师可以对幼儿进餐“值日生”工作的进行精益化改进,营造规则遵守下的闲适有序地进餐环境,充分利用音乐在幼儿进餐中的审美效用,在活动中加强幼儿与环境美的互动机会。
[Abstract]:Life aesthetics is the beauty of life as a practical aesthetics research object, is also a kind of attitude towards life pursuit. The kindergarten food education, simply said, is associated with the activities of education on diet, food education, education in food, mainly including diet education and diet education in the other all aspects of education. This research mainly uses the observation method and interview method, using purposive sampling method to select two Guilin provincial demonstrative kindergarten, kindergarten through the investigation of food education management system, education contents and kindergarten kindergarten food food education organization etc., understand the kindergarten food education status, as the carrier, discuss infiltration of life aesthetics in the kindergarten food education in the process of analysis of kindergarten food education fit the problems existing in the process of life and aesthetics, discusses the improvement of kindergarten food education in how to use the concept of life aesthetics Not harmonious phenomenon, and puts forward relevant suggestions for kindergarten food education harmony. The thesis consists of five parts: the first part is introduction. Introduces the research background of this paper, a review of the related research results, related concepts, purpose and significance of this study, design ideas and steps of the research in the second part. The kindergarten catering management system, food education contents and food education carried out in the form of aspects of the kindergarten. The kindergarten food education status of diet management system includes the kindergarten food use management system, management system of food production and consumption system of the environmental management system and kitchen employees. Kindergarten food education content: develop children's eating habits of children. The food and nutrition knowledge, traditional diet culture, cherish food education. Kindergarten food education organization: Preschool meals, plantation life experience, Cross class game activities, "happy little kitchen" activity room in collective teaching activities and delicacy themed activities. The third part analyzes the life aesthetics in the kindergarten food education penetration in the situation. Mainly reflected in the food safety operation, diet nutrition collocation, food color, flavor, shape of diet beauty; the classroom environment shows the beauty of the environment; focus on children's physical culture and harmonious growth of the various activities of the children's manners, reflected on children's physical and mental harmony; children through service to others and to the nursing process of vegetables in life experience the beauty of labor. In the fourth part of life the aesthetic perspective of food education of kindergarten, kindergarten food education and influence factors are in want of perfection kindergarten food education fit and life aesthetics. The kindergarten food education in want of perfection is mainly reflected in: diet and food making Lack of beauty show, children dining environment, the interaction between the children and the environment beautiful full, teachers to scold and scolding children's meals when the level of experience of child labor beauty needs to be strengthened. The factors affecting the quality of kindergarten food education: kindergarten food education management concept, kindergarten physical environment support factors and comprehensive quality the kindergarten teacher factors. The fifth part puts forward some suggestions for the kindergarten food education harmonious. In the aspect of aesthetic oriented rich food education management system of kindergarten, kindergarten life aesthetics department evaluation standard in life aesthetics infiltration, kindergarten food education management system of the infiltration, in order to promote the development of life aesthetics in conventional food education in kindergarten in the process of; should pay attention to the introduction and training of teachers in the kindergarten, the kindergarten should be introduced or directed the cultivation of comprehensive quality of strong children Teachers, strengthen guidance and support for teachers in kindergarten encouragement; reinforce the material and space environment support, kindergarten can build small classroom "small kitchen" or small independent restaurants, rich food mold, tableware and table landscaping materials; in the aspect of improving the management of kindergarten teachers of art and education, teachers can the children's meals "duty" work of the lean improvement, and create rules under the quiet and orderly dining environment, make full use of music aesthetic effect in children's meals, strengthen children and the environment beautiful interactive opportunities in the activities.
