饲用猪油的质量与氧化稳定性评定

【摘要】:本试验旨在评定热油炉火炼工艺生产的饲用猪油的质量与氧化稳定性,为其在饲料中的合理应用和贮存提供依据,也为正在拟写中的《饲料用油脂动物油脂》国家标准的制定提供有参考价值的基础数据。采集10个不同生产批次的新鲜饲用猪油样品,测定其主要质量指标、卫生指标、脂肪酸组成及氧化稳定性。结果表明:猪油的酸价、过氧化值、碘价、皂化值、不皂化物、水分及挥发物、不溶性杂质、丙二醛、加热减重的平均值分别为0.47 mg KOH/g、0.86 mmol/kg、59.40 g/100g、189.61 mg/g、0.28%、0.097%、0.030%、0.10 mg/kg、0.17%,其中变异系数最高的为丙二醛(45.45%),最低的为皂化值(1.54%);砷(As)0.1 mg/kg、铅(Pb)1.0 mg/kg,铜(Cu)含量在0.02~0.91 mg/kg,矿物油、苯并(a)芘(Bap)均未检出;饲用猪油的脂肪酸组成与相对含量比较稳定,不饱和脂肪酸占总脂肪酸含量平均为62.71%;以过氧化值达到5 mmol/kg为判断标准,基于60℃条件下猪油过氧化值测定结果,预测6个批次猪油样品在20、30℃下的平均货架期分别为238、119 d。综上可知,本试验所采集的饲用猪油质量达到《食用猪油》和正在拟写的国标《饲料用油脂动物油脂》的要求,氧化稳定性较好,贮存期较长。
[Abstract]:The quality and oxidative stability of the test is to feed the fire hot lard production refining process evaluation, provide the basis for its reasonable application in feed and storage, as well as being written in the "feed data provide a basis reference for the formulation of national standards of animal fats. Fats > fresh forage samples were collected 10 lard different production batches, determination of the main quality indicators, health indicators, fatty acid composition and oxidation stability. The results showed that: lard, acid value, peroxide value, iodine value, saponification value, unsaponifiable matter, moisture and volatile, insoluble impurities, MDA, the average weight loss on heating was 0.47 mg KOH/g 0.86, mmol/kg, 59.40 g/100g, 189.61 mg/g, 0.28%, 0.097%, 0.030%, 0.10 mg/kg, 0.17%, of which the highest coefficient of variation for malondialdehyde (45.45%), the lowest for saponification value (1.54%); arsenic (As) 0.1 mg/kg, lead (Pb) 1 mg/kg (Cu) containing copper In 0.02~0.91 mg/kg, mineral oil, benzo (a) pyrene (Bap) were not detected; feeding lard fatty acid composition and relative content of unsaturated fatty acids, total fatty acid content is 62.71%; with the peroxide value of 5 mmol/kg as a standard, 60 C a lard too determination of oxidation value based on the results of prediction of 6 batches of lard samples at 20,30 DEG. The average shelf life was 238119 D. in summary, were collected to feed lard quality edible lard is < > and < quasi GB written by oil feed animal fat > requirements, oxidation stability, long storage period.
