不同添加剂对舍饲滩羊肉品质调控及生产性能影响的研究

【摘要】:本论文通过饲养试验、消化代谢试验和屠宰试验研究了过瘤胃赖氨酸(RPLys)、共轭亚油酸(CLA)、N-氨甲酰谷氨酸(NCG)对舍饲滩羊生产性能、肉品质、消化代谢和血液生化指标的影响,旨在筛选出即可提高滩羊生产性能,又可改善羊肉品质的最适添加剂。试验共分为四部分:试验一:不同添加剂对舍饲滩羊生长性能的影响选择健康无病的育成滩羊32只,按体重相近原则随机分为4组,每组8只(母羊5只,公羊3只)。对照组饲喂基础日粮,试验Ⅰ组饲喂基础日粮+8g/d RPLys,试验Ⅱ组饲喂基础日粮+2%CLA,试验Ⅲ组喂基础日粮+0.2%NCG。全期试验60d,在第Od和第60d分别测定各处理组体重、体尺指标,并记录每日饲料采食量。结果表明:RPLys(试验Ⅰ组)、CLA(试验Ⅱ组)、NCG(试验Ⅲ组)对舍饲滩羊体高、体长、管围增长幅度无显著差异(P0.05),RPLys和CLA均可显著提高滩羊公羊胸围增长幅度(P0.05),极显著提高滩羊母羊胸围增长幅度(P0.01),而NCG对滩羊公、母羊胸围增长幅度有提高的趋势(P0.05);本试验以试验Ⅱ组平均干物质采食量最高,为900.48g/d,其次为试验Ⅰ组,对照组最低;试验Ⅱ组平均日增重显著高于其他三组(P0.05),试验Ⅰ组和试验Ⅲ组与对照组平均日增重无显著差异(P0.05)。试验二:不同添加剂对舍饲滩羊产肉性能及肉品质的影响本试验在上述日粮条件下,经60d饲养试验,分别取各处理组3只公羊进行屠宰试验,并测定肉品质。结果表明:RPLys、CLA、NCG的添加均对屠宰率、胴体净肉率和肉骨比无显著差异(P0.05),但却改变了胴体肌肉和脂肪的比率。试验Ⅰ组胴体瘦肉率有降低的趋势(P0.05),试验Ⅱ组和试验Ⅲ组瘦肉率分别极显著(P0.01)、显著(P0.05)高于对照组。各处理组眼肌面积、GR值、肌肉pH值、失水率、熟肉率、大理石花纹评分及肉常规指标无显著差异(P0.05)。试验Ⅱ组背膘厚度显著低于试验Ⅰ组(P0.05);肉色b*值和L*值各处理组间无显著差异(P0.05),但CLA显著提高了肉色a*值(P0.05),而NCG有提高的趋势(P0.05)。肌内脂肪含量以试验Ⅱ组最高,显著高于对照组(P0.05)和试验Ⅰ组(P0.05),试验Ⅱ组肌内脂肪含量显著高于试验Ⅰ组(P0.05)。通过顶空固相微萃取-气质联用技术,本试验中对照组、试验Ⅰ组、试验Ⅱ组和试验Ⅲ组分别鉴定出55种、64种、66种、61种挥发性风味物质,有26种挥发性化合物为各处理组所共有,其中试验Ⅰ组和试验Ⅲ组己醛相对含量较高,不利于改善肉品风味。试验Ⅱ组己醛相对含量比对照组降低1.201%,一定程度上降低了肉中的不良风味物质。试验三:不同添加剂对舍饲滩羊消化代谢的影响取各处理组3只试验羊公羊,采用单只栓系饲养进行消化代谢试验,日粮组成与饲养方式同试验一。每天收集、称量试验羊粪、尿及剩料量,测定饲料养分的表观消化率和氮表观代谢率。结果表明:除试验Ⅱ组极显著提高粗脂肪表观消化率(P0.01),极显著降低中性洗涤纤维和酸性洗涤纤维表观消化率外(P0.01),试验Ⅰ组、试验Ⅲ组及试验Ⅱ组其他养分表观消化率无显著差异(P0.05);而氮表观代谢率三个添加剂组均有不同程度提高,试验1组氮表观代谢率极显著高于对照组(P0.01),试验Ⅱ组和试验Ⅲ组均显著高于对照组(P0.05)。试验四:不同添加剂对舍饲滩羊血液生化指标的影响日粮条件同试验一,在饲养试验正试期第Od、15d、30d、45d、60d抽取各处理组试验羊空腹状态下血样,静置取血清,测定各处理组试验羊不同时期的血液生化指标。结果表明:RPLys、CLA、NCG对血清总蛋白含量、血清甘油三酯含量无显著影响(P0.05)。试验Ⅰ组在试验后期血糖浓度显著升高(P0.05)。试验Ⅱ组血清总胆固醇随饲喂时间的持续而降低,且血糖浓度保持相对稳定。综上所述,CLA兼具提高舍饲滩羊生长和改善肉品质的双重功效,是滩羊高效饲养和生产高档羊肉的最适添加剂。
[Abstract]:This paper through the feeding experiment, digestion and metabolism test and slaughter test of rumen protected lysine (RPLys), conjugated linoleic acid (CLA), N- N-carbamoylglutamate (NCG) on the production performance and meat quality in sheep, metabolism and blood biochemical indexes of digestion, aims at screening out can improve the production performance of sheep the most suitable additives, can improve the quality of mutton. The test is divided into four parts: experiment one: effect of different additives on growth performance in Tan sheep healthy bred sheep 32, according to the principle of similar weight were randomly divided into 4 groups, 8 rats in each group (5 ewes and 3 RAMS). The results showed that: RPLys (group I), CLA (test group II), NCG (test group) for feeding sheep body height, body length, circumference growth rate had no significant difference (P0.05), RPLys and CLA can significantly improve the growth rate of sheep ram bust (P0.05), significantly to improve the growth rate of Tan sheep ewes circumference (P0.01), and NCG on the growth rate of male, ewe bust had increasing trend (P0.05); in this experiment, the experimental group II average dry matter intake was highest, followed by the 900.48g/d group, and lowest in the control group; the test group average daily gain was significantly higher than the other the three group (P0.05), group I and III group and control group had no significant difference in average daily gain (P0.05).
