不同饲养方式对芦花鸡屠宰性能和肉品质的影响

【摘要】:试验旨在研究不同饲养方式对芦花鸡的血液生化指标和肌肉中氨基酸含量的影响。选取6周龄芦花鸡雏鸡200只,随机分成2组,分别采用笼养、地面散养两种方式饲养60 d。各组随机选取8只,于晨饲前采血后屠宰,测定屠宰性能、血清生化指标和胸肌中氨基酸含量。结果表明:两组屠宰率、半净膛率和全净膛率差异不显著(P0.05),但笼养组翅膀率和腿肌率较高;散养组总蛋白、白蛋白、胆固醇和低密度脂蛋白胆固醇含量显著或极显著低于笼养组(P0.05或(P0.01);散养组胸肌中苏氨酸、谷氨酸、缬氨酸和酪氨酸含量均显著高于笼养组(P0.05),丝氨酸含量极显著高于笼养组(P0.01)。散养组胸肌中甘氨酸、丙氨酸、组氨酸、赖氨酸和脯氨酸含量显著低于笼养组(P0.05),必需氨基酸含量显著高于笼养组(P0.05),呈味氨基酸含量高于笼养组,但差异不显著(P0.05)。提示不同饲养方式对卢花鸡胸肌蛋白质和氨基酸含量有显著影响。总的来看,传统散养方式有利于氨基酸含量的提高,但会降低屠宰率、半净膛率和全净膛率。
[Abstract]:The purpose of this study was to study the effects of different feeding methods on blood biochemical indexes and amino acid content in muscle of Luhua chicken.Two hundred six week-old rutile chicks were randomly divided into two groups. They were raised in captivity and scattered on the ground for 60 days.Eight rats were randomly selected and slaughtered before morning feeding to determine slaughtering performance, serum biochemical indexes and amino acid content in pectoralis muscle.The results showed that there was no significant difference between the two groups in slaughtering rate, semi-eviscerated muzzle rate and total eviscerated rate, but the wing rate and leg muscle rate in cage group were higher, total protein and albumin in bulk group were higher than those in control group.The contents of cholesterol and low density lipoprotein cholesterol (LDL-C) were significantly lower than those in cage group (P0.05 or P0.01), and the contents of threonine, glutamate, valine and tyrosine in pectoralis muscle in free-range group were significantly higher than those in cage group (P 0.05), and the content of serine was significantly higher than that in cage group (P 0.01).The contents of glycine, alanine, histidine, lysine and proline in the pectoralis muscle in the free-range group were significantly lower than those in the cage group (P 0.05), the content of essential amino acids was significantly higher than that in the cage group (P 0.05), and the content of taste amino acid was higher than that in the cage group, but the difference was not significant (P 0.05).The results suggested that the protein and amino acid contents in breast muscle of Luhua chicken were significantly affected by different feeding methods.In general, the traditional way of bulk feeding was beneficial to the increase of amino acid content, but it would decrease the slaughter rate, semi-purge rate and the total purge rate.
