蕨麻猪不同杂交组合重要经济性状对比研究

【摘要】:蕨麻猪肉质鲜嫩,含有丰富的营养物质,是唯一含有碳酸酐酶的猪种,受到广大消费者的喜爱,但蕨麻猪生长速度慢,瘦肉率低,养殖成本高,市场受众面积小,因此,为进一步推动蕨麻猪广泛市场化,提高蕨麻猪生产效率,选用国内外优秀猪种,对蕨麻猪进行杂交改良是解决这一生产困境的重要措施。本研究以蕨麻猪为研究对象,用太湖和巴克夏公猪分别与蕨麻猪配种杂交,对两种杂交组合猪(太蕨猪和巴蕨猪)的生长状况、体尺指标、育肥性能、胴体性能和肉质性能进行对比研究,以期为蕨麻猪的杂交改良提供科学依据,为蕨麻猪的创新利用提供理论支持。通过对太蕨猪和巴蕨猪重要经济性状研究,结果表明:1、哺乳期生长状况对比:巴蕨猪初生重显著高于太蕨猪(P0.05),巴蕨猪生长速度显著快于太蕨猪(P0.05)。2、体尺指标对比:巴蕨猪体高和体长显著高于太蕨猪(P0.05)。3、育肥性能对比:巴蕨猪平均日增重显著高于太蕨猪(P0.05),太蕨猪料肉比显著高于巴蕨猪(P0.05),巴蕨猪育肥性能优于太蕨猪。4、胴体性能对比:巴蕨猪胴体瘦肉率和腿臀比例显著高于太蕨猪(P0.05),巴蕨猪眼肌面积极显著高于太蕨猪(P0.01)。5、肉质性能对比:(1)太蕨猪肉色显著好于巴蕨猪(P0.05),巴蕨猪肌肉剪切力显著低于太蕨猪(P0.05),巴蕨猪肉质更为细嫩。(2)巴蕨猪肉蛋氨酸、组氨酸、必须氨基酸含量显著高于太蕨猪(P0.05)。(3)太蕨猪肉多不饱和脂肪酸含量显著低于巴蕨猪(P0.05),巴蕨猪肉保健价值更好。(4)巴蕨猪肌纤维直径显著小于太蕨猪(P0.05),巴蕨猪肌肉嫩度更好。(5)太蕨猪背最长肌中MyHCⅠ基因mRNA表达量显著高于巴蕨猪(P0.05),巴蕨猪MyHCⅡx基因mRNA表达量显著高于太蕨猪(P0.05),巴蕨猪MyHCⅡb基因mRNA表达量极显著高于太蕨猪(P0.01)。综上所述,巴蕨猪生产性能较好,料肉比相对较低,肉质营养和保健价值较优,食用口感更佳,经济效益高,用巴克夏公猪改良蕨麻猪效果相对较好。
[Abstract]:Fern hemp pig is the only pig species with carbonic anhydrase, which is fresh and tender in meat quality and rich in nutrients. It is popular among consumers. However, fern hemp pig has a slow growth rate, low lean meat rate, high breeding cost and small market area. In order to further promote the wide marketization of fern hemp pigs and improve the production efficiency of fern hemp pigs, it is an important measure to solve this production dilemma to select excellent pig breeds at home and abroad and to improve the crossbreeding of fern hemp pigs. In this study, fern hemp pigs were used to crossbreed with fern pigs by Taihu and Baxia boars, respectively. The growth status, body size index and fattening performance of two hybrid pigs (Taifern pig and Badien pig) were studied. The comparative study on carcass performance and meat quality was carried out in order to provide scientific basis for crossbreeding improvement of fern hemp pigs and theoretical support for innovative utilization of fern hemp pigs. In this paper, we studied the important economic characters of Taitian pig and Badian pig. The results showed that the birth weight of the fern pig was significantly higher than that of P0.05, and the growth rate of the fern pig was significantly faster than that of P0.05. 2. The comparison of body size index showed that the body height and body length of the fern pig were significantly higher than that of P0.05. 3, and the growth rate of the fern pig was significantly higher than that of the white fern pig P0.05. 3, and the growth rate of the fern pig was significantly faster than that of the Taifern pig. The average daily gain of the fern pigs was significantly higher than that of the Taifern pigs (P0.05N), the feed / meat ratio of the Taifern pigs was significantly higher than that of the P0.05s of P0.05, and the fattening performance of the fern pigs was better than that of the Tai-fern pigs .4.The carcass performance was significantly higher than the carcass lean percentage and the ratio of legs and buttocks of the fern pigs. Histidine, The content of essential amino acids was significantly higher than that of P0.05%. 3) the content of polyunsaturated fatty acids in Pteris fern pork was significantly lower than that in P0. 05% of P0. 05%, and the value of health care was better. 4) the diameter of muscle fiber of Pteris fern was significantly smaller than that of P0. 05%, and the muscle tenderness of Pteris fern was significantly lower than that of P0. 05%.
