不同添加量的甘草饲喂对多浪羊肉特征风味物质的影响

【摘要】:本研究以新疆特殊碱性环境下养殖的特色肉羊品种多浪羊为研究对象,探究日粮中添加不同比例的甘草对多浪羊皮下脂肪组织中挥发性物质的影响。采用顶空固相微萃取和同时蒸馏萃取两种前处理方式,利用气相质谱联用仪器为分析手段对多浪羊皮下脂肪组织中的挥发性成分进行检测分析。建立了多浪羊皮下脂肪组织中的挥发性成分萃取和检测条件,研究日粮中不同甘草添加量对挥发性成分的影响。主要研究结果如下:1采用同时蒸馏萃取为前处理方法,探究了该方法对多浪羊皮下脂肪组织中的挥发性化合物萃取条件。结果表明,萃取时间为80 min、样品用量为100 g、萃取溶剂为乙醚、色谱柱为DB-FFAP、程序升温:柱初温40℃,保持2 min,以6℃/min上升到120℃,保持1 min,接着以4℃/min上升到160℃,保持1 min,最后以2℃/min上升到210℃,保持5 min。基本满足了对脂肪组织中挥发性物质的研究要求。2采用顶空固相微萃取为前处理方法,探究了该方法对多浪羊皮下脂肪组织中的挥发性化合物萃取条件。结果表明,萃取时间为60 min、萃取温度为100℃、样品用量为10 g。基本满足了实验的要求。3采用同时蒸馏萃取为前处理方法,对不同甘草添加量喂养的多浪羊皮下脂肪组织进行了分析。结果表明,当甘草添加量为40%时对挥发性物质的影响较大,部分挥发性脂肪酸的减少量为:己酸31.75%,辛酸19.51%,癸酸12.43%,4-甲基辛酸34.47%,4-甲基壬酸41.64%。4采用顶空固相微萃取为前处理方法,对不同甘草添加量喂养的多浪羊皮下脂肪组织进行了分析。结果表明,共检测出了32种化合物,酸类、酯类、醛类、酮类等,其中酸类化合物的含量减少了5%,醛类减少了3%。5两种前处理方法在多浪羊皮下脂肪组织中共检测出了83种化合物,其中主要的三大类化合物为:酸类化合物占40.96%,酯类化合物占19.28%,醛类化合物占12.05%。
[Abstract]:In this study, we studied the effects of different proportion of liquorice on volatile substances in subcutaneous adipose tissue of Doulang sheep, a special breed of mutton sheep bred under special alkaline environment in Xinjiang, in order to investigate the effect of different proportion of liquorice on the volatile substances in subcutaneous adipose tissue of Doulang sheep. Headspace solid-phase microextraction (SPME) and simultaneous distillation extraction (SPME) were used to detect and analyze the volatile components in the subcutaneous adipose tissue of Duolang sheep by gas phase mass spectrometry (GC-MS). The extraction and detection conditions of volatile components in subcutaneous adipose tissue of Doulang sheep were established to study the effect of different dosage of Glycyrrhiza uralensis on volatile components in diet. The main results are as follows: 1. The extraction conditions of volatile compounds in the subcutaneous adipose tissue of Doulang sheep were studied by using simultaneous distillation and extraction as the pretreatment method.
