海藻糖对乳酸杆菌耐热和室温贮存保护作用的研究

【摘要】:乳酸杆菌不耐高温和室温贮存是其应用于饲料添加剂的一大限制因素,本试验旨在研究5%(W/V)的海藻糖对三株乳酸杆菌在高温处理和室温贮存条件下的保护作用。结果表明:海藻糖能显著提高乳酸杆菌耐热性和室温贮存的存活率,且不同菌株抗逆性能不同,其中F22菌株表现出较G31和H51两株菌更好的耐热性和耐贮性。添加海藻糖保护的F22菌株70℃处理5 min,活菌数为(6.0±0.1)×10~5cfu/m L,对照组为(1.2±0.1)×10~2 cfu/m L;室温贮存15 d,添加海藻糖的试验组存活率为(127.94±0.23)%,对照组为(89.45±0.78)%。由此可见,海藻糖可作为微生态制剂高温加工和室温贮存的保护剂,提高乳酸杆菌的耐热性和延长保质期。
[Abstract]:High temperature tolerance of Lactobacillus and storage at room temperature are one of the limiting factors for its application in feed additives. The purpose of this study was to study the protective effect of 5% trehalose on three Lactobacillus strains under high temperature treatment and room temperature storage. The results showed that trehalose could significantly improve the heat resistance of Lactobacillus and the survival rate of storage at room temperature, and the stress resistance of different strains was different.
