川陈皮素对育肥猪生产性能和肉质风味的影响

【摘要】:本论文旨在研究添加不同剂量的川陈皮素对肥育猪生产性能和肉质风味的影响,据此阐明川陈皮素在优质风味猪肉生产中应用价值、并筛选适宜的添加剂量。在饲养试验中,选取96头120日龄平均体重75.9±0.5 kg的杜×(长×大)(DLY,肥育猪),随机分成A、B、C、D共4个处理组,每个处理4个重复,每个重复6头猪。A为对照组,饲喂玉米-豆粕基础日粮,B、C、D组在基础日粮上分别添加0.25kg/t、0.50 kg/t和1.00 kg/t川陈皮素。饲养周期为50天,全程自由采食、饮水、按照常规方法进行饲养管理。试验开始、结束时统计阶段始重、末重、平均日增重、平均日采食量和耗料增重比等生长性能。在试验猪170日龄时,每组选取4头猪屠宰,然后进行屠宰性能和肉品质指标测定。试验结果表明:(1)饲料中添加川陈皮素对肥育猪平均日增重、平均日采食量、耗料增重比无显著影响(P0.05)。(2)饲料中添加川陈皮素对肥育猪胴体重、屠宰率、胴体直长、胴体斜长、背膘厚、瘦肉率、眼肌面积、板油重、皮厚均没有显著影响(P0.05)。与对照组相比,添加量为0.5‰时瘦肉率和眼肌面积数值上分别提高了2.3%和9.9%。(3)饲料中添加川陈皮素对肥育猪pH值、滴水损失、烹煮损失、肉色评分、剪切力均无显著影响(P0.05)。当川陈皮素添加量为0.5‰时肉色a*值提高了7.0%,烹煮损失降低了15.9%,剪切力降低了19.1%。(4)饲料中添加川陈皮素对肥育猪肉中水分和蛋白质有显著升高(P0.05),对肌内脂肪无显著影响(P0.05)。(5)饲料中添加川陈皮素可显著提高鲜肉中肌苷酸的含量(P0.05),当川陈皮素添加量为0.5‰时,提高了17.3%。当川陈皮素添加量为0.5‰时显著提高了亚油酸、花生酸的含量分别为14.4%、25.6%(P0.05),而多不饱和脂肪酸提高了14.2%(P0.05);但对葵酸、月桂酸、肉豆蔻酸、棕榈酸、硬脂酸和油酸无显著影响(P0.05)。(6)饲料中添加川陈皮素对肥育猪内脏器官心、肝、脾、肺、肾指数均无显著影响(P0.05)。上述结论表明,在日粮中添加适量的川陈皮素对育肥猪的生产性能、屠宰性能、器官指数、肉质表观性状无显著影响,但对猪肉中蛋白质含量显著提高,对肉质风味有积极的改善作用。以肌苷酸、亚油酸、花生酸等风味物质含量为筛选依据,川陈皮素适宜的添加剂量为0.5‰。
[Abstract]:The purpose of this study was to study the effects of different doses of Sichuan pericarp on the performance and meat flavor of fattening pigs, so as to elucidate the application value of Sichuan pericarp in the production of high quality flavor pork and to screen the appropriate additive amount. In the feeding experiment, 96 120 day average body weight of 75.9 卤0.5 kg (long 脳 large) (DLY, fattening pigs) were randomly divided into 4 treatment groups, 4 replicates per treatment and 6 pigs per replica as control group. The basal diets were fed with corn-soybean meal basal diet, and the basal diets were supplemented with 0.25kg / t 0.50 kg/t and 1.00 kg/t pericarp, respectively. Feeding period is 50 days, the whole course is free to feed, drinking water, according to the routine method of feeding management. At the beginning of the experiment and at the end of the experiment, the growth performance was observed, such as the beginning weight, the end weight, the average daily gain, the average daily feed intake and the ratio of feed consumption to weight gain. At 170 days of age, 4 pigs were slaughtered in each group, and then slaughtering performance and meat quality were measured. The results showed that: (1) the average daily gain, average daily feed intake and feed consumption gain of fattening pigs were not significantly affected by the addition of Chuan Chen Pei in feed (P0.05). (2) on carcass weight, slaughter rate, carcass straight length and carcass oblique length of fattening pigs. Backfat thickness, lean meat percentage, eye muscle area, plate oil weight and skin thickness were not significantly affected (P0.05).
