灰毡毛忍冬藤叶及绿原酸对肥育猪肉品质的影响

【摘要】:本研究选择同栋栏舍、同一批次体重在55kg左右二元杂(长白×大白)阉公猪32栏,每栏10-14头猪,随机平均分成4个处理组,分别为:对照组,饲喂基础日粮;灰毡毛忍冬组Ⅰ组和Ⅱ组,基础日粮中分别添加0.5%和1%灰毡毛忍冬藤叶粉;绿原酸组,基础日粮中添加800g/t纯度为25%的绿原酸。饲喂60天后进行屠宰,并收集血清及组织样品。检测结果如下:1对肥育猪生长性能与胴体品质的影响灰毡毛忍冬及绿原酸对肥育猪采食量及日增重没有显著影响,绿原酸组全程料肉比下降10.20%(P0.05);灰毡毛忍冬Ⅱ组眼肌面积有降低的趋势(P0.1);绿原酸组肝脏指数较其他3组提高8%左右(P0.05)。2对肥育猪血液参数的影响灰毡毛忍冬Ⅰ组和灰毡毛忍冬Ⅱ组血清中胆固醇(TC)和甘油三酯(TG)含量均显著下降(P0.05)。3对肥育猪肌肉品质的影响日粮中添加0.5%和1%灰毡毛忍冬藤叶粉可降低肉色的L*值,提高a*值,并可降低pH值下降速度,提高肌肉24小时pH值,提高肌肉中游离氨基酸His、Gly、Arg、Val、Leu、Lys含量。其中,灰毡毛忍冬Ⅰ组肌肉中多不饱和脂肪酸(PUFA)显著提高(P0.05),且肝脏中PUFA有提高趋势(P0.1);日粮中添加800g/t绿原酸可显著提高肥育猪肌内脂肪,游离氨基酸His、Gly、Arg、Val、Leu、Lys含量,并有提高肌肉中单不饱和脂肪酸含量的趋势。综上,日粮中添加0.5%和1%灰毡毛忍冬藤叶粉对肥育猪生长性能无显著影响,添加800g/t绿原酸可提高肥育猪生长性能;日粮中添加灰毡毛忍冬藤叶粉可以有效降低肥育猪血液中胆固醇、甘油三酯含量。结论:日粮中添加0.5%和1%灰毡毛忍冬藤叶粉及800g/t绿原酸能在一定程度上改善猪肉品质。
