青贮香蕉茎叶饲喂条件下的云南黄牛屠宰性能与肉品质研究

【摘要】:本文通过对三种香蕉茎叶青贮饲料(香蕉茎叶+4%玉米面混合青贮、70%香蕉茎叶+30%稻草混贮及70%香蕉茎叶+30%干蔗梢混贮)育肥牛的屠宰指标以及肉质理化指标进行测定分析,对比三种日粮的育肥牛肉质的效果,探讨三种香蕉茎叶青贮饲料对云南黄牛的屠宰性能及肉品质的影响,并比较其优缺点。试验按日粮结构分为三组,肉牛饲养结束后进行屠宰、分割,并分析其肉样的理化指标及化学成分。结果表明:三种香蕉茎叶青贮饲料饲喂出的云南黄牛屠宰性能均较好,高档肉块比例较高,胴体最终等级均达到A(3±1)优质标准,营养丰富;第3组香蕉茎叶与甘蔗梢混合组,屠宰性能最好;其中第1组(添加4%玉米面)肉品质相对最优,蛋白含量最高,氨基酸评分高出理想模式,属于优质蛋白,说明利用玉米面与香蕉茎叶混合青贮饲料最好;在脂肪酸组成上,三种香蕉茎叶日粮育肥牛肉的SFA、PUFA、MUFA比例适合,且PUFA/SFA、n-6/n-3PUFA的比例均在理想推荐值范围内,其中香蕉茎叶与稻草混合肉牛脂肪酸风味最好,而香蕉茎叶与玉米面混合肉牛脂肪酸口感最佳,是具有合理健康的脂肪酸组成的优质肉类。本文结果可以为继续开发香蕉茎叶饲料育肥高档优质牛肉提供参考。
[Abstract]:In this paper, three kinds of banana stalk and leaf silage (banana stem and leaf 4% corn flour mixed silage) were studied. The slaughter index and meat quality index of fattening cattle were determined and analyzed, and the effects of the three diets on the meat quality of fattening cattle were compared with those of 70% banana stem and leaf mixed storage with 30% straw and 70% banana stem and leaf mixed storage with dry sugarcane shoot. The effects of three kinds of banana stalk and leaf silage on slaughter performance and meat quality of Yunnan yellow cattle were studied and their advantages and disadvantages were compared. The experiment was divided into three groups according to the structure of the diet. The beef cattle were slaughtered and partitioned after feeding, and the physicochemical indexes and chemical components of the meat samples were analyzed. The results showed that the three kinds of banana stalk and leaf silage had better slaughtering performance, higher proportion of high-grade meat, and the final grade of carcass were all up to A (3 卤1) high quality standard. The dressing performance of the third group was the best when the banana stems and leaves were mixed with sugarcane shoots. The first group (supplemented with 4% corn flour) had the best meat quality, the highest protein content, the higher amino acid score than the ideal model, and belonged to the high quality protein, indicating that the silage mixed with corn flour and banana stem and leaf was the best. In terms of fatty acid composition, the SFA,PUFA,MUFA ratio of three kinds of banana stem and leaf diets for fattening beef was suitable, and the proportion of PUFA/SFA,n-6/n-3PUFA was within the ideal recommended value range. The fatty acid flavor of beef cattle mixed with banana stem and leaf and straw is the best, while the fatty acid of banana stem and leaf mixed with corn flour is the best. It is a good meat with reasonable and healthy fatty acid composition. The results can provide a reference for the further development of banana stem and leaf feed for fattening high quality beef.
