农村居民腌制品偏好的社会学研究

【摘要】:长期以来,不合理饮食行为对人们身体健康的影响,越来越受到人们的关注。有科学研究表明,以腌肉、腌菜为代表的腌制品对人体有害,是食管癌的诱发因素之一。然而,我国大部分农村地区,腌制品偏好却是一个较为普遍的现象。这不禁令人发出疑问:既然腌制品对人体有害,为什么农村居民腌制品偏好现象会如此普遍?学术界对这一现象缺乏关注,因而也没有对农村居民腌制品偏好的行为逻辑进行强有力的解释。基于这一事实的存在,本文以苏北地区x村为个案,通过问卷调查、访谈收集资料,全面了解当地农村居民腌制品偏好的现象,分析农村居民腌制品偏好的内在逻辑,对农村居民腌制品偏好现象进行合理性的解释。在此基础上,探讨使腌制品偏好成为风险的动力机制,进而分析农村居民面对这种风险将会做出的行为选择。 通过对农村居民腌制品偏好的主观态度、饮食腌制品的频率、腌制品的消费量以及农民对腌制品偏好行为的认知等几个方面进行考察,发现当地农村居民总体上存在腌制品偏好的事实。构成这种事实的内在逻辑表现在三个方面:第一,腌制品是上千年流传下来的习俗文化,习俗文化不仅使农民的腌制品偏好日常生活化,而且对农民自我认同的维护具有重要的作用;第二,现有的经济发展水平,基于收入支配最大化的目的,节省消费支出,农民以现有资源和生产、生活方式促成了腌制品的存在;第三,农民的风险感知仅仅停留在对外显风险环境的认知。由于农村居民文化水平普遍偏低,获得健康知识的途径匮乏,他们并没有意识到腌制品偏好这种潜在风险环境的存在。农村居民对腌制品偏好行为的预期是安全的。 目前中国社会正处在现代性趋向的变革中,现代社会高度反思性的特征与日常生活发生了联系。随着人们对科学、专家系统的信任,饮食生活已经不再完全遵从于习俗文化或日常生活经验,而更多以科学地健康饮食为主导原则。在这种情况下,科学研究揭示出腌制品对人体可能产生的危害,腌制品偏好会给农民带来健康风险。于是,在传统性尚未消解,现代性已经嵌入到农村社会的时候,是否继续饮食腌制品需要农民做出选择。面对健康风险,农民的行为将表现为传统型、过渡型、现代型等三种类型。 处于转型时期的农村社会,科学知识的渗入影响着农村居民的生产、生活方式,同时也将潜在的习俗文化所具有的风险性显现出来,但习俗文化依然使人们惯习的实践着日常生活。因此,农村居民的腌制品偏好不可能在短期内消解。然而,腌制品的饮食习俗最终与健康饮食标准背道而驰,科学、健康的饮食方式是人类发展的必然趋势。实现传统饮食习惯到现代饮食方式的转变需要一个过程,在这个过程中,不仅要提高全民生活的健康意识,更应该合理市场配置,有效调配农村资源,增加农村居民收入,改善人民生活,最终实现建设全民健康社会的目标。
[Abstract]:For a long time, the unreasonable diet behavior of the impact on people's health, people pay more and more attention. Scientific research shows that, with bacon, pickles on behalf of pickled products harmful to the human body, is one of the predisposing factors of esophageal cancer. However, most of the rural areas of our country, pickled products is a relatively common preference the phenomenon. This can not help but question: since the pickled products harmful to the human body, why rural residents preference phenomenon will be salted so prevalent? The academic circles lack of attention to this phenomenon, and thus there is no preference on rural residents' behavior logic of salted strong explanation. This fact is based on taking the X village in northern area of Jiangsu Province as a case, through the questionnaire survey, interview, a comprehensive understanding of the local rural residents salted the phenomenon of preference analysis, pickled products preference of rural residents is the inner logic of the rural population. The reason for the preference of pickled products is explained rationally. On this basis, the dynamic mechanism of making pickled products preferences become risk is discussed, and then the behavior choices of rural residents facing this risk will be analyzed.
Residents in the rural areas through the pickled products preference subjective attitude, dietary salt product frequency, investigated several aspects of the consumption of salted and pickled products on farmers preference behavior cognition, discovered the existence of pickled products preference of rural residents in general local fact. The fact that the performance of the internal logic structure in three aspects: first, pickles is handed down for thousands of years of culture, custom culture not only make farmers' preference pickled products of daily life for farmers, and self identity maintenance plays an important role; second, the current economic development level, income maximization based on the purpose of saving consumption expenditure, farmers with existing resources and production that way of life contributed to pickled products exist; third, risk perception of farmers only stay in the explicit risk environment cognition. Because of the cultural level of rural residents is generally low There is a lack of access to health knowledge. They are not aware of the potential risk environment of pickled products. Rural residents' expectations for pickled products' preference behavior are safe.
At present, China society is in the modern tendency of change, having the relationship characteristics of modern society highly reflective and daily life. Along with the people to the science, the expert system of trust, life is no longer in full compliance with the diet custom culture and daily life experience, and more scientific to healthy diet as the leading principle in this. Under the condition of scientific research reveals the harm to the human body may produce pickles, pickled products preference will bring health risks to farmers. So, in the traditional yet modern digestion has been embedded into the time of rural society, whether to continue eating pickled products need to make a choice. Farmers face health risks, the behavior of the farmers will be the traditional type, transitional type, modern type three types.
In the transition period of rural society, scientific knowledge into the influence of rural residents production, way of life, but also has the potential risk of custom and culture emerged, but still make people customs and cultural habitus of daily life practice. Therefore, rural residents can not dispel salted preference in the short term however, salted diet custom and healthy eating. The final draw further apart, scientific, healthy diet is the inevitable trend of the development of mankind. The traditional eating habits to the modern diet needs a process, in this process, not only to improve the life consciousness of health, should be more rational allocation of market. The effective allocation of resources in rural areas, increase the income of rural residents, improve people's lives, realize the construction of national health and social goals.
