内蒙古高校餐饮业发展研究

【摘要】: 在全国高校后勤社会化改革的大背景下,高校餐饮业的改革也在不断的向前推进。内蒙古高校餐饮业在全国高校餐饮业中处于一个相对落后的状态,由于学校自办学生食堂的模式难以实现高度的专业化、规模化,其成本较高,质量难有大的提高空间。如何在新的形势下进一步推进高校餐饮改革,建立健全符合市场经济运行规律和我国、我区特点的高校餐饮管理体制和经营体制;如何创新管理模式,强化内部管理;如何提高专业技能水平,进一步改进生产工艺等,都是摆在我们面前的新的理论研究课题。为此撰写本文,希望能为我区高校餐饮业的发展做一份贡献。本文以包头师范学院为例,对内蒙古高校餐饮业的发展进行对策研究,共分为三个部分:第一部分主要是对内蒙古高校餐饮业现状进行分析,内容包括经营管理模式的分析、成本分析和包头师范学院餐饮现状分析。第二部分主要是阐述内蒙古高校餐饮存在的问题,此部分从餐饮基础设施不足,负担太重、伙食价格稳定与餐饮成本不断增加之间的矛盾、餐饮服务的高要求和高校餐饮员工整体素质不高的矛盾、就餐者消费要求的提高与其经济承受能力有限的矛盾、社会餐饮与学校餐饮竞争激烈,导致就餐率低下、高校餐饮工作与广大学生沟通不足,缺乏桥梁纽带等六方面阐述了内蒙古高校餐饮面临的矛盾和困难。第三部分是内蒙古高校餐饮工作的对策研究,此部分从争取政策支持,深化餐饮实体内部的改革,减轻高校餐饮负担;加强成本核算,完善价格形成机制,积极参与地区性集中采购,努力降低餐饮成本;进一步提高餐饮员工整体素质;加强高校餐饮环境建设,提高与社会餐饮的竞争力;研究学生消费心理,科学合理的引导消费;建立与学生沟通的桥梁,使得信息畅通等六个方面对我区高校餐饮工作的发展进行了对策研究。
[Abstract]:Under the background of the socialized reform of university logistics in the whole country, the reform of the catering industry in colleges and universities is also advancing continuously. In Inner Mongolia, the catering industry of colleges and universities is in a relatively backward state in the catering industry of colleges and universities in the whole country. It is difficult to realize highly specialized, large-scale, high cost and difficult to improve the quality of the self-run student canteen. How to further promote the university catering reform under the new situation, To establish and improve the catering management system and management system of colleges and universities in line with the operating laws of the market economy and the characteristics of our country and our region; how to innovate the management model and strengthen the internal management; how to improve the level of professional skills and further improve the production process, etc. It is a new theoretical research subject in front of us. In order to write this article, I hope to make a contribution to the development of catering industry in colleges and universities in our district. Taking Baotou normal University as an example, this paper makes a countermeasure study on the development of catering industry in colleges and universities in Inner Mongolia. It is divided into three parts: the first part is the analysis of the present situation of the catering industry in Inner Mongolia, including the analysis of the management mode. The second part is mainly about the problems of catering in Inner Mongolia colleges and universities, which is due to the insufficiency of catering infrastructure and the heavy burden. The contradiction between the stable food price and the increasing food cost, the contradiction between the high requirements of the catering service and the low overall quality of the catering staff in colleges and universities, the contradiction between the improvement of the consumption requirements of the diners and their limited economic bearing capacity, The fierce competition between social catering and school catering leads to a low dining rate and insufficient communication between the catering work in colleges and universities and the vast number of students. The third part is the research on the countermeasures of catering work in colleges and universities in Inner Mongolia. In this part, we should strive for policy support and deepen the internal reform of catering entities. Lighten the burden of catering in colleges and universities, strengthen cost accounting, perfect price formation mechanism, actively participate in regional centralized procurement, strive to reduce catering costs, further improve the overall quality of catering staff, strengthen the construction of catering environment in colleges and universities, To improve the competitiveness of social catering, to study students' consumption psychology, to guide consumption scientifically and reasonably, to establish a bridge with students, and to make the information smooth, etc., to study the countermeasures for the development of catering work in colleges and universities in our district.
