台湾餐饮连锁经营发展研究

【摘要】: 近年来,台湾餐饮连锁业取得了一定程度的发展。但是台湾餐饮连锁企业在发展的过程中也表现出一定的问题,比如缺乏品牌意识、缺乏文化内涵、人才机制不健全、配送技术落后、管理运作模式落后等。这些问题都在一定程度上制约了台湾餐饮连锁业的进一步发展和整体竞争优势的提升。 本论文结合已有的研究成果对如何提升台湾餐饮连锁业的竞争优势进行了相关探讨。本文由以下几个部分组成:第一部分为绪论,阐明本论文的研究背景、研究动机和研究价值。第二部分为文献回顾,笔者对餐饮业、连锁经营相关理论、餐饮连锁业的发展态势进行了回顾,为论文的后部分做好理论铺垫。第三部分对餐饮企业的连锁经营三种模式:直营连锁、特许连锁和自由连锁进行了详细的比较分析。第四部分对台湾餐饮连锁业的现状、特色优势、发展态势以及存在的问题进行了分析。第五部分为全文的核心部分,基于论文的前半部分的阐述,笔者对如何提升台湾餐饮连锁业的竞争优势和使其更快更好的发展战略进行了探讨,建议餐饮连锁企业可采用品牌战略、创新战略、人才战略、文化战略、物流配送战略等来增强本身的竞争力。论文最后,笔者对全文进行了总结回顾。 希望本论文能对相关餐饮从业人员如何提升连锁餐饮业的竞争优势有些帮助。
[Abstract]:In recent years, Taiwan food chain industry has made a certain degree of development. However, there are some problems in the development of Taiwan's catering chain enterprises, such as lack of brand awareness, lack of cultural connotation, imperfect talent mechanism, backward distribution technology, backward management mode and so on. To a certain extent, these problems have restricted the further development of Taiwan's catering chain industry and the promotion of its overall competitive advantage. This paper discusses how to enhance the competitive advantage of Taiwan's catering chain industry based on the existing research results. This paper consists of the following parts: the first part is an introduction to clarify the research background, research motivation and research value. The second part is literature review, the author reviews the catering industry, chain management theory, catering chain industry development situation, for the latter part of the paper to do a good theoretical groundwork. In the third part, three modes of chain management of catering enterprises are compared and analyzed in detail: direct chain, franchise chain and free chain. The fourth part analyzes the current situation, characteristic advantages, development situation and existing problems of Taiwan's catering chain industry. The fifth part is the core part of the thesis. Based on the exposition of the first half of the thesis, the author discusses how to enhance the competitive advantage of Taiwan's catering chain industry and how to make it develop more quickly and better. It is suggested that restaurant chain enterprises should adopt brand strategy, innovation strategy, talent strategy, cultural strategy, logistics and distribution strategy to enhance their competitiveness. At the end of the paper, the author summarizes and reviews the full text. It is hoped that this paper will be helpful to the relevant catering industry in how to enhance the competitive advantage of the chain catering industry.
