HACCP体系在乳制品加工业的应用研究
[Abstract]:With the globalization of economy and the pursuit of nutrition and diet structure, food safety has become a hot topic. In recent years, China's dairy industry has maintained rapid development, at the same time, people put forward higher requirements for the quality and safety of dairy products. Hazard Analysis critical Control Point (HACCP), as a prevention system to control food safety hazards, has been highly concerned by the governments of various countries. Understanding and drawing lessons from HACCP system and carrying out food safety supervision and management have increasingly become an important means for Chinese government and enterprises to solve domestic food safety problems. HACCP system is a scientific and simple method. The practical preventive food safety management system has obvious effect in preventing and controlling the potential harm and minimizing the risk in the whole process of food raw material production, processing, storage and transportation, sales and so on. Based on the application of HACCP system in dairy processing enterprises, this paper analyzes the development course of HACCP system and the operation mode of HACCP system by system analysis and case analysis on the basis of deep research on HACCP theory. The combination of macro analysis and micro analysis points out the influencing factors and existing problems in the operation of the system, as well as the defects in the effective operation of the HACCP system and the aspects that need to be improved. Then this paper selects D enterprise of dairy production enterprise in Shandong province to carry on the case study, verifies the enterprise in the raw material milk inspection, the process control, the final product quality and the consumer satisfaction degree through the empirical research. The application and effect of HACCP system in quality and safety management of dairy enterprises are analyzed. The goal of strict HACCP system is to improve and implement HACCP system to promote the progress of quality and safety management of dairy industry in China.
