食品冷链物流的安全性评价及其改善途径

【摘要】:近年来,食品安全事故常常发生。作为保障食品安全的重要环节之一,食品冷链物流在食品冷链中扮演着十分重要的角色。食品冷链物流由多个流程构成,且物流可靠性会受到因各流程之间相互衔接而产生作用的影响,所以,对流程可靠性的关注越来越多。 在需要冷链支持的食品行业里,乳品行业是一个比较特殊的行业,不仅供应链长而且环节多,涉及到三个产业,分别为第一产业(农牧业)、第二产业(食品加工业)和第三产业(分销、物流等),其中任何一个环节出现问题,都会影响到整体的质量安全,,最终影响乳品企业和消费者的利益。乳品市场的竞争日趋激烈,为了提高乳品企业的竞争力、同时为加快我国乳制品物流的发展,论文将乳品企业的冷链物流系统作为研究对象,以乳品企业的冷链物流过程为例,针对乳制品从原奶采集到产成品销售的全部环节,对其冷链流程进行研究,分析各个环节存在的安全隐患。 本文对乳品企业的冷链物流流程进行了实证分析:运用AHP法构建流程评价指标体系,然后根据流程优先矩阵中评价指标与流程对应的关联程度建立关键流程的综合识别模型,这一步骤通过熵值法来完成;采用GO-FLOW法对乳品冷链物流系统建立GO-FLOW图,明确影响乳品冷链物流安全性的问题,对关键流程的参数进行改进。提出以乳品为代表的食品冷链物流关键流程的建设方法与优化措施,以期推动我国食品冷链物流健康、快速的发展。本文主要研究结论与创新点如下: 第一,对冷链物流的相关理论进行了系统总结和回顾,通过对冷链食品的科学分类和冷链物流理论的综合分析,探索了冷链物流安全评价和冷链流程的理论与方法。 第二,对乳制品冷链物流系统的安全要求和物流系统的物流模式进行了剖析,阐述了冷链食品的物流安全需求,总结了在流通过程中乳制品可能遇到的影响物流安全可靠性的多种因素。 第三,构建物流流程评价指标体系,采用层次分析法得到流程优先矩阵评价指标和流程的匹配程度,运用熵值法建立关键流程综合识别模型,进行排序后得出冷链物流中关键流程,最后运用GO-FLOW法对乳制品冷链物流进行安全性风险的评价,通过定性与定量相结合的分析,得出影响乳制品冷链安全风险的影响程度。 第四,基于AHP法、熵值法与GO-FLOW法的研究结果,论文最终给出了提高乳品冷链物流系统可靠性的政策建议与改进措施。
[Abstract]:In recent years, food safety accidents often occur. As one of the important links to ensure food safety, food cold chain logistics plays a very important role in food cold chain. Food cold chain logistics is composed of many processes, and the reliability of logistics is affected by the connection between the processes. Therefore, more and more attention has been paid to the process reliability. In the food industry, which needs cold chain support, the dairy industry is a relatively special industry. It not only has a long supply chain but also many links. It involves three industries, namely, the primary industry (agriculture and animal husbandry). Any problems in the secondary industry (food processing industry) and the tertiary industry (distribution, logistics, etc.) will affect the overall quality and safety, and ultimately affect the interests of dairy enterprises and consumers. In order to improve the competitiveness of dairy enterprises and accelerate the development of dairy logistics in China, the paper takes the cold chain logistics system of dairy enterprises as the research object, taking the cold chain logistics process of dairy enterprises as an example. The cold chain flow of dairy products from raw milk collection to finished product sales is studied and the hidden safety problems in each link are analyzed. In this paper, the cold chain logistics process of dairy enterprises is empirically analyzed: AHP method is used to construct the process evaluation index system, and then a comprehensive identification model of key processes is established according to the correlation degree between the evaluation index and the process in the process priority matrix. This step is accomplished by entropy method. The GO-FLOW diagram of the cold chain logistics system of dairy products was established by using GO-FLOW method, and the problems affecting the safety of cold chain logistics of dairy products were clarified, and the parameters of the key process were improved. In order to promote the healthy and rapid development of food cold chain logistics in China, this paper puts forward the construction method and optimization measures of the key process of food cold chain logistics represented by dairy products. The main conclusions and innovations of this paper are as follows: first, the related theories of cold chain logistics are systematically summarized and reviewed, through the scientific classification of cold chain food and the comprehensive analysis of cold chain logistics theory. The theory and method of cold chain logistics safety evaluation and cold chain flow are explored. Secondly, the security requirements of the cold chain logistics system of dairy products and the logistics mode of the logistics system are analyzed, and the logistics safety requirements of the cold chain food are expounded. This paper summarizes the factors that may affect the safety and reliability of logistics during the circulation of dairy products. Thirdly, the evaluation index system of logistics process is constructed, and the matching degree between the evaluation index of process priority matrix and the process is obtained by AHP, and the comprehensive identification model of key process is established by entropy method. After sorting out the key process of cold chain logistics, finally using GO-FLOW method to evaluate the safety risk of dairy cold chain logistics, through the qualitative and quantitative analysis, the influence degree of the impact on the safety risk of dairy cold chain is obtained. Fourthly, based on the research results of AHP method, entropy method and GO-FLOW method, the paper finally gives the policy recommendations and improvement measures to improve the reliability of dairy cold chain logistics system.
