基于网络DEA的食品质量链绩效评价研究

【摘要】:随着经济全球化、需求个性化以及信息技术的进步,企业内外部环境发生了根本性的变化,绩效的提高不仅依赖于技术的专业化和标准化,而且要将视野聚焦在相关企业之间的配合上。食品又有其自身的特殊性,食品质量对保质期、卫生条件、运输条件、存储条件等质量因素都有极高的要求,而且食品质量流流经多个企业,质量绩效的评价复杂且多变。食品行业与人民日常生活息息相关,食品的质量直接影响着社会经济的发展,绩效的评价和改进能为相关企业的质量管理提供理论支持,食品质量链绩效的研究对食品质量改进有着重要的意义。本文从以下三个方面展开了研究:首先,在定义和阐述食品质量链的基础上,选取食品质量链绩效评价指标,运用S-L序贯型网络DEA方法建立食品质量链绩效评价模型,并根据模型运算结果为提高食品质量链绩效的有效性提供了量化改进的处理方法。其次,在食品质量链绩效评价的基础上,通过灰色关联度分析方法确定影响食品质量链绩效的关键指标,从而实现对食品质量链绩效的评价、改进和分析。最后,以乳品企业A为例对本文评价方法的有效性进行验证。本文提出的食品质量链绩效评价方法为拓宽食品质量链的研究提供了一种思路,食品质量链上各相关企业可以依据网络DEA方法计算的结果对质量投入资源进行改进,从而确定资源的合理投入,并对影响食品质量链绩效的关键指标进行重点监督,为食品质量链管理提供依据;本文的实证研究结果表明,乳品企业A生产的B品牌早餐奶的质量链绩效呈现上升态势并逐渐趋于有效;在影响B品牌早餐奶质量链绩效的21个指标中,鲜奶市场占有率、鲜奶合格率、鲜奶供应能力、利乐包合格率、B品牌早餐奶研发成果转化率对该食品质量链绩效的影响最为显著。
[Abstract]:With the globalization of economy, individuation of demand and progress of information technology, the internal and external environment of enterprises have undergone fundamental changes. The improvement of performance depends not only on the specialization and standardization of technology,And to focus on the field of vision related to the cooperation between enterprises.Food has its own particularity, food quality has very high requirements on quality factors such as shelf life, sanitary conditions, transportation conditions, storage conditions, and food quality flow through many enterprises, the evaluation of quality performance is complex and changeable.Food industry is closely related to people's daily life. The quality of food directly affects the development of social economy. The evaluation and improvement of performance can provide theoretical support for the quality management of related enterprises.The research on the performance of food quality chain is of great significance to the improvement of food quality.Firstly, on the basis of defining and expounding the food quality chain, the performance evaluation index of food quality chain is selected, and S-L sequential network DEA method is used to establish the food quality chain performance evaluation model.According to the results of the model, it provides a quantitative improvement method for improving the effectiveness of food quality chain performance.Secondly, on the basis of the performance evaluation of food quality chain, the key indexes affecting the performance of food quality chain are determined by the method of grey correlation analysis, so as to realize the evaluation, improvement and analysis of the performance of food quality chain.Finally, taking dairy enterprise A as an example, the effectiveness of this evaluation method is verified.The food quality chain performance evaluation method proposed in this paper provides a way to broaden the research of food quality chain. Related enterprises on the food quality chain can improve the quality input resources according to the results of the network DEA method.In order to determine the reasonable input of resources, and to focus on the key indicators affecting the performance of food quality chain to provide the basis for food quality chain management.The quality chain performance of B brand Breakfast Milk from Dairy Enterprise A showed a rising trend and gradually tended to be effective. Among the 21 indexes that affect the quality chain performance of B brand Breakfast Milk, the market share of fresh milk, the qualified rate of fresh milk, the supply ability of fresh milk, and so on.The conversion rate of R & D of Breakfast Milk of brand B has the most significant effect on the performance of the food quality chain.
