二次酶解法制备低能SLS型结构脂质工艺研究

【摘要】:以一级大豆油、乙醇及乙酸为原料,在脂肪酶Novozym 435催化作用下,先用一级大豆油与乙醇进行醇解工艺制得Sn-2-单甘脂,再将Sn-2-单甘脂与乙酸进行酶促酯化反应得到SLS型结构脂质,其优化的第2次酶解工艺条件是:反应时间11.6 h,加酶量8.0%,底物物质的量比5.5∶1,反应温度44.0℃。在此条件下乙酸插入率为64.5%,经分子蒸馏后获得纯度为94.3%,热值21.12 k J/g的SLS型结构脂质,与普通大豆油相比,热值降低了45%。
[Abstract]:Sn-2- monoglyceride was prepared by alcoholysis of first-grade soybean oil, ethanol and acetic acid with lipase Novozym 435 as catalyst. Then esterification of Sn-2- monoglyceride with acetic acid was carried out to obtain SLS structural lipid.
