复合益生菌、碱性负离子液对南丹瑶鸡生长和肉质的影响研究

【摘要】:本试验目的在于研究不同浓度的复合益生菌、碱性负离子液及其之间的互作效应对南丹瑶鸡生长性能、肌肉品质、血清生理生化指标、肌肉重金属含量、风味氨基酸等方面的影响。试验研究分为三个部分:第一部分:研究在饲料中添加不同浓度的复合益生菌对16周龄的南丹瑶鸡生长性能、肌肉品质、血清生理生化指标的影响。试验采用单因素随机设计,将240只16周龄的南丹瑶鸡,随机分成4组,每组设3个重复,每个重复20只鸡。试验预饲期1周,正饲期9周,共计10周。对复合益生菌浓度设计三个水平,分别是0.1%、0.2%、0.4%,对照组采用基础日粮饲养。试验结果表明:①生长性能:0.2%复合益生菌组在末重、平均日增重、平均日采食量、料重比方面效果最好(p0.05)。②肉品质:复合益生菌对南丹瑶鸡的肉色、PH值、剪切力没有显著影响(p0.05),但0.1%的复合益生菌组胸肌、腿肌的系水率显著高于其他几组(p0.05)。③血清生理生化指标:0.2%复合益生菌显著提高血清中TP、GLB、IgG的含量(p0.05),0.4%复合益生菌显著降低血清中CHOL、ALT的含量(p0.05)。第二部分:研究在饮用水中添加不同浓度的碱性负离子液对16周龄的南丹瑶鸡生长性能、肌肉品质、血清生理生化指标、肌肉中重金属的残留的影响。试验采用单因素随机设计,将360只16周龄的南丹瑶鸡,随机分成6组,每组设3个重复,每个重复20只鸡。试验预饲期1周,正饲期9周,共计10周。对碱性负离子液浓度设计五个水平,分别是0.2ml/L、0.25ml/L、0.33ml/L、0.5ml/L、1ml/L,对照组采用正常饮用水。试验结果表明:①生长性能:0.5ml/L碱性负离子液组显著提高南丹瑶鸡的末重、平均日增重(p0.05),显著降低平均日采食量、料重比(p0.05)。②肌肉品质:0.33ml/L、0.5ml/L、1ml/L浓度碱性负离子液组胸肌肉色显著高于对照组(p0.05),试验组腿肌剪切力高于对照组。③血清生理生化指标:0.25 ml/L碱性负离子液显著增加血清中HDL的含量(p0.05);0.5ml/L碱性负离子液显著降低血清中ALT、ALP的含量(p0.05),增加SOD的浓度(p0.05);1ml/L碱性负离子液显著降低血清中COHL、LDL、GOT的含量(p0.05),增高IgM(p0.05)的含量。④肌肉中重金属的残留:0.25ml/L、0.33 ml/L碱性负离子液显著降低肌肉中铅的含量(p0.05),试验组肌肉中未检测到重金属汞的含量且对降低肌肉中砷的含量有促进作用(p0.05)。第三部分:研究复合益生菌、碱性负离子液之间的互作效应对16周龄的南丹瑶鸡生长性能、肌肉品质、血清生理生化指标、肌肉中风味氨基酸的影响。试验选用360只16周龄的南丹瑶鸡,采用双因素2×3析因设计,即2个水平的复合益生菌(0.1%、0.2%)、3个水平的碱性负离子液(0.25ml/L、0.33ml/L、0.5ml/L)。随机分成6组,每组设3个重复,每个重复20只鸡。试验预饲期1周,正饲期9周,共计10周。试验结果表明:①生长性能:0.1%复合益生菌*0.33ml/L碱性负离子液组在末重、平均日增重、平均日采食量、料重比方面表现最好。②肌肉品质:0.1%复合益生菌*0.33ml/L碱性负离子液组显著降低腿肌剪切力(p0.05),0.2%复合益生菌*0.25ml/L碱性负离子液组显著提高腿肌肉色(p0.05),0.2%复合益生菌*0.5ml/L碱性负离子液显著提高胸肌肉色。③血清生理生化指标:0.1%复合益生菌*0.33ml/L碱性负离子液组提高血清中A/G比值(p0.05),0.2%复合益生菌*0.25ml/L碱性负离子液组降低血清中胆固醇含量,0.2%复合益生菌*0.5ml/L碱性负离子液增加血清总蛋白、白蛋白的含量(p0.05)。④肌肉中风味氨基酸含量:0.1%复合益生菌*0.5ml/L碱性负离子液组对南丹瑶鸡肌肉风味氨基酸的影响较大,它显著提高肌肉中苯丙氨酸、赖氨酸、谷氨酸、酪氨酸的含量(p0.01);0.2%复合益生菌*0.25ml/L碱性负离子液组提高肌肉中甜味氨基酸丝氨酸的含量(p0.05)。
[Abstract]:The purpose of this study was to study the effects of the different concentrations of compound probiotics, alkaline negative ions and their interaction on the growth performance, muscle quality, serum physiological and biochemical indexes, heavy metal content of muscle and flavor amino acids in Nandan Yao chicken. The experimental study was divided into three parts: Part 1: the study was added to feed. The effects of the compound probiotics on the growth performance, muscle quality and serum physiological and biochemical indexes of the 16 week old Nandan Yao chicken. The trial was randomly divided into 4 groups of 4 groups of 16 weeks old Nandan Yao chicken with single factor random design. Each group had 3 repetitions and each repeated 20 chickens. The test was 1 weeks in the pre feeding period and 9 weeks in the positive feeding period. The concentration design was three levels, 0.1%, 0.2%, 0.4%, and the control group was fed with basic diet. The results showed: (1) growth performance: 0.2% compound probiotics group at the end weight, average daily weight gain, average daily feed intake, material weight ratio best (P0.05). Meat quality: Composite probiotics to Nandan Yao chicken meat color, pH, shear force did not show Influence (P0.05), but 0.1% of the complex probiotics group breast muscle, leg muscle water rate significantly higher than the other groups (P0.05). 3. Serum physiological and biochemical indicators: 0.2% compound probiotics significantly increase the serum TP, GLB, IgG content (P0.05), 0.4% compound probiotics significantly reduce the content of CHOL, ALT in blood (P0.05). Second part: Research in drinking water added The effects of different concentration of alkaline anion solution on the growth performance, muscle quality, serum physiological and biochemical indexes and the residual heavy metal in the muscle of 16 weeks old Nandan Yao chicken. The experiment was designed by single factor random design. 360 16 weeks old Nandan Yao chicken were randomly divided into 6 groups, each group was set up with 3 repetitions and 20 chickens were repeated. The test period was 1 weeks, positive. The feeding period was 9 weeks, a total of 10 weeks. The concentration of alkaline anion solution was designed five levels, which were 0.2ml/L, 0.25ml/L, 0.33ml/L, 0.5ml/L, 1ml/L. The control group used normal drinking water. The experimental results showed that: (1) growth performance: 0.5ml/L alkaline negative ionic liquid group significantly improved the final weight of Nandan Yao chicken, average daily weight gain (P0.05), and significantly reduced the average daily feed intake. The weight ratio (P0.05). (2) muscle quality: 0.33ml/L, 0.5ml/L, 1ml/L concentration of alkaline negative ion group was significantly higher than that of the control group (P0.05), and the shear force of the leg muscle in the test group was higher than that of the control group. (3) the serum physiological and biochemical indexes: 0.25 ml/L alkaline negative ionic liquid significantly increased the content of HDL in the blood (P0.05), and the 0.5ml/L basic negative ion solution was significantly reduced. The content of ALT, ALP (P0.05) in serum, increased the concentration of SOD (P0.05), and 1ml/L alkaline negative ion solution significantly reduced the content of COHL, LDL, GOT (P0.05) in the serum (P0.05), increased IgM (P0.05) content. 4. The residue of heavy metals in the muscle, 0.33 alkaline negative ionic liquid significantly reduced the content of lead in the muscle, and the weight of the muscle was not detected in the test group. The content of metal mercury can promote the content of arsenic in muscle (P0.05). The third part: study the effect of the interaction between the compound probiotics and the alkaline anion solution on the growth performance, the muscle quality, the serum physiological and biochemical index and the flavor amino acid in the muscle of the 16 weeks old Nandan Yao chicken. The experiment selected 360 16 weeks old Nan Danyao Chickens, using a double factor 2 x 3 factorial design, 2 levels of compound probiotics (0.1%, 0.2%), 3 levels of alkaline anion liquid (0.25ml/L, 0.33ml/L, 0.5ml/L), were randomly divided into 6 groups, each set of 3 repetitions, each repeat 20 chickens. The trial feeding period was 1 weeks and a total of 9 weeks in the positive feeding period. The results showed: (1) growth performance: 0.1% compound probiotic *0. 33ml/L alkaline negative ion group was at the end weight, average daily weight gain, average daily feed intake, material weight ratio, and muscle quality: 0.1% compound probiotics *0.33ml/L alkaline negative ionic liquid group significantly reduced the leg muscle shear force (P0.05), 0.2% compound probiotic alkaline negative subsolution group significantly increased leg muscle color (P0.05), 0.2% compound probiotics *0.5ml/L alkaline negative ionic liquid significantly increased the flesh color of the chest muscle. (3) the serum physiological and biochemical indexes: 0.1% compound probiotic *0.33ml/L alkaline negative ionic liquid group increased the serum A/G ratio (P0.05), the 0.2% compound probiotic *0.25ml/L alkaline negative ionic liquid group reduced the serum cholesterol content, 0.2% compound probiotics *0.5ml/L alkaline negative ionic liquid added blood. Total protein, albumin content (P0.05). (4) content of flavor amino acids in muscle: 0.1% compound probiotic *0.5ml/L alkaline anion group has great influence on the muscle flavoring amino acids of Nandan Yao chicken. It significantly improves the content of phenylalanine, lysine, glutamic acid, tyrosine (P0.01) in muscle, and 0.2% compound probiotic alkaline negative ions. The liquid group increased the content of sweet amino acid serine in muscle (P0.05).
