熟化条件对饲用玉米淀粉结构及糊化特性的影响

【摘要】:熟化条件指饲料熟化过程中的高温、高湿、高压以及时间等,饲料熟化时能杀灭饲料原料中的细菌和病毒等微生物,降解毒素,使抗营养因子失活,淀粉糊化,蛋白质变性,熟化饲料比普通饲料色、香、味更佳,而且能提高饲料10%~30%利用率。本文就熟化条件对饲用玉米淀粉的颗粒大小、形态结构、淀粉直/支比、结晶度以及糊化特性的影响进行了综述,并阐明饲用玉米熟化温度89~96℃,水分26%,压力越高效果越好,旨在为饲用玉米熟化条件的选择提供理论依据和参考。
[Abstract]:The aging condition refers to the high temperature, high humidity, high pressure and time in the process of feed ripening. When the feed is ripe, it can kill the bacteria and viruses in the feed raw material, degrade the toxin, inactivate the anti-nutritive factors, gelatinize the starch, and denaturalize the protein. Cooked feed has better color, flavor and taste than ordinary feed, and can increase feed utilization rate by 10% / 30%. The effects of ripening conditions on grain size, morphology, amylose / branching ratio, crystallinity and gelatinization characteristics of fodder corn starch were reviewed in this paper.
