超声波法制备玉米抗性淀粉的工艺条件

【摘要】:以玉米淀粉为原料,采用超声波法制备抗性淀粉,考察不同淀粉乳含量、超声时间、超声功率、超声温度及回生时间对玉米抗性淀粉形成的影响。结果表明,玉米抗性淀粉最佳提取工艺为淀粉乳含量25%,超声时间10 min,超声功率600 W,超声温度45℃,回生时间24 h,在此条件下,抗性淀粉得率为25.06%。研究结果可为玉米抗性淀粉在酸奶中的应用提供试验基础。
