汞的毒性作用及在动物性食品中的检测现状

【摘要】：随着汞的广泛使用,其对环境的污染越来越严重,通过食物链进行循环富集作用,对人类健康构成威胁。文章简述汞在不同形态下对动物和人的危害机理,分析重金属汞的污染来源和残留情况,分析目前国内外对动物性食品的重金属汞限量标准,并对汞的检测现状和发展趋势进行展望分析。
[Abstract]:With the widespread use of mercury, its pollution to the environment is becoming more and more serious. In this paper, the harm mechanism of mercury to animals and people in different forms is briefly described, the pollution sources and residues of heavy metal mercury are analyzed, and the limit standards of heavy metal mercury for animal foods at home and abroad are analyzed. The present situation and development trend of mercury detection were analyzed.
