复凝聚法制备茶油微胶囊

【摘要】:以明胶和阿拉伯胶为壁材,采用复凝聚法制备茶油微胶囊。通过对微胶囊成囊形态的观察,并结合微胶囊包埋率,确定制备条件;以包埋率为评价指标,通过正交试验优化获得最佳包埋工艺条件,通过累计释放研究获得胶囊保存条件。结果表明:包埋率较高的条件下,微胶囊呈圆形,分散好;最佳条件为壁材浓度3%,芯材壁材质量比1妣3,搅拌速度900 r/min,反应温度55℃,p H 4.6,搅拌时间15 min,该条件下的包埋率为88.49%;累积释放研究表明,微胶囊贮藏受湿度影响大,湿度越大,累计释放量越多。
[Abstract]:Using gelatin and Arabic gum as wall materials, tea oil microcapsules were prepared by complex coacervation. The preparation conditions were determined by observing the morphology of microencapsulation and combining the embedding rate of microcapsules, and the optimal conditions of encapsulation were obtained by orthogonal experiment, and the preservation conditions were obtained by accumulative release study. The results showed that the microcapsules were circular and well dispersed under the condition of high embedding rate.
